Trophy Cupcakes - Hummingbird

I learned my lesson my first time at Trophy Cupcakes: If you want to try more than one 'cake, bring a friend. So I did. My girlfriend, Jen, and I went back to Trophy on a mission, to try something new. Me, I would have been perfectly happy to try a basic chocolate/vanilla cupcake. Jen was game for anything. Needless to say we were both well pleased by our choices.

 

I've seen this cake listed on their website and their blog, but I'd be damned if I could tell you what it was exactly. Lavender? Grapefruit? Stardust? Well we found out together when Jen ordered it: banana, coconut, pineapple cake with a cream cheese frosting. Sound good? It is.

 

Cake: Jen's reaction upon tasting this: "My god, it's a muffin!" And in texture it really is like a muffin with a slightly lighter texture. It is fruity without being sticky sweet and the blend of flavors was almost perfect. I could taste each flavor distinctly, never completely losing one behind another.

 

Frosting: While the cake was a divine mix, the frosting was simplicity itself. It's hard to mess up a cream cheese frosting, but it can be done. This was sweet, light and tangy.

 

Together: Sweet and tart, smooth and moist... this was a fabulous combination and I can imagine it going very well with a latte.
