individual pots of kulfi (icecream) and kulfi (icecream) cubes for dessert buffet style. first attempt. all now in the freezer

ice cube container with plastic pushup bottom from poundland £1
round pots too big but will do for now, from poundland 8 for £2

ingredients
2 litres creamy whole milk www.sainsburys.co.uk/gol-ui/product/grahams-gold-jersey-f...
50g ground almonds
150g sugar
a few drops of vanilla essence replaced the rosewater recommended in the recipe, i had none of the latter
method
bring the milk to the boil
reduce the heat and continue to cook, stirring frequently, until the milk is reduced to less than half its volume
remove from the heat
add the sugar
stir until the sugar has dissolved
add the ground almonds and vanilla essence, stir
allow to cool
once cool decant into containers and seal with lid
place in the freezer
kulfi must be served semi frozen and not soft like icecream
notes
reduction took a very long time.
i'll try turning the heat up slightly higher next time.
after boiling the milk i simmered on just over the 2 on the hob.
i didn't want to burn the bottom of the pan.
i used a wooden spoon and stirred frequently
i emptied the milk into a measuring jug to make sure i had reduced the milk by half, from 2 litres to 1 litre
i have at times seen icecream makers for sale in charity shops.
i wish i'd bought one. from tomorrow i'm searching ...
