Quick vegetable paella

We were reorganising cupboards after Liz moved in, and realised that we have enough rice, beans and quinoa to feed all the vegans in China ('tis a LOT of vegans!). So Liz made this as our first assault on the pile, and it was, no surprise, very very good. Just right for a wet night and a video.
