Weight And Cover

After layering and pounding, cover the mix with whole cabbage leaves, a plate and a weight (I use a jar of water). Press down on the plate firmly, but not too firmly (you don't want to break the plate) to bring the juices up and to futher take out extra air pockets.

 

Then cover with a pretty cloth, place in a cool place, and wait about a month.

Done
