Papaya Pudding
Memiap Pudding (Papaya Pudding)
Ingredients
100g butter or margarine, softened
¾ cup sugar
3 eggs
1⅔ cups flour
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
10 limes, squeezed
1 medium ripe papaya
Method
•Stir margarine (or butter) and sugar in a bowl, then add the eggs and mix well
•Sift flour, nutmeg and cinnamon into the mixture, add the lime juice
•Peel the papaya, remove the seeds and cut into chunks
•Put the papaya in a greased round baking pan, pour the mixture over and bake for about 30 minutes at 350°F
Health Notes
Papaya is an excellent source of Vitamins A and C.
In its green stage you can eat it as a vegetable. The more ripe the papaya the sweeter it is.
