Peas & Carrots

My brother, being a glutton for punishment, decided to make the "Peas & Carrots" recipe from Thomas Keller's French Laundry again (in addition to the traditional Christmas dinner of turkey, stuffing, etc.). These are crepes filled with Maine lobster and topped with pea shoot salad, with a carrot-ginger emulsion, if I remember correctly. Delicious.
