Apricot Fruit Roll Ups, (Fruit Leather), Las Vegas, NV
I put a little bit of lemon juice in the food processor when I make my apricot slurry. This helps to retain the apricot color in storage.
I put plastic wrap on the bottoms of my pans and spread the apricot slurry about 1/4" thick or less and let it dry. I place the pans in a room that is not used so dust doesn't settle on them.
The fruit roll ups will be dry in a couple of days, or a few hours less if I put this out in our desert sun.
