since i need to keep them submerged i looked and looked all over my kitchen for something and finally figured on my coffee press, not very authentic, but it will keep the olives submerged!

 

note: todd was worried that the metal might have some kind of chemical reaction.... yikes... i have now moved the olives to a glass jar with a piece of crockery holding them down.... to be continued.
