Pistaccio tapioca pudding

Serves 4

 

2 cups non-dairy milk

1 tsp pistaccio paste

6 Tbsp sugar

1/2 cup instant tapioca

 

Bring milk, sugar and pistaccio paste to a boil, stirring constantly to dissolve.

Add the tapioca pearls and cook on medium heat until they become translucid.

Pour in 4 small bowls, allow to cool and refrigerate until set.
