It May Not Look Good But...

it was great. I have been working on my chicken and rice recipe, trying different sices, different meats, different rice, etc. Trying to find thr one combination that taste the best. This one was pretty good. I used leg portions (on the bone, with skin). I browned them in olive olive oil first, with onions, bell pepper, garlic, and pimentos. I spiced them with black pepper, adobo, cumin, red curry (a pinch), cayenne pepper (a pinch), a sprinkle of crushed red peppers (pizza peppers I used to call them), and paprika. I used Jasmine rice. I ccoked the meat in the water until it started to fall from the bones and then added the rice. I also fished out most of the skin once freed from the meat and tossed it - it did it's part by adding to the stock.

 

All in all it was very good - lots of meat (4 thighs and 5 drumsticks).
