Solar Dryer

Another solar dryer in the Philippines. This is a simpler, cheaper design that works very well. This particular center is owned locally and is part of a center that also has fermentation bins. This allows local traders to purchase unfermented cocoa from farmers in smaller amounts so that they can aggregate enough to process efficiently at scale for export. Proper fermentation and drying techniques are critical for producing the quality level of cocoa needed to make chocolate.
