Sprinkle the yeast into the carboy.

 

Wine yeast typically says "do not stir" but the instructions for the apfelwein suggested holding back the last litre of apple juice to assist in flushing through any yeast granules that stick to the glass. As it turned out, the stir/don't stir debate was kinda academic as the yeast all sank to the bottom.
