STUART - Chef and co-owner of Lola's Seafood Eatery, Bernard Uffer, right, and chef Justin Bowns, knock out lunch orders at the new casual seafood restaurant in Stuart. Despite a feeble economy, Uffer and co-owner Charlie Paolino opened the business on December 4, 2008. Uffer says they opened the restaurant because they were bored and needed something to do. Both men are retired restauranteurs and Uffer has worked as a chef and published cookbooks. Uffer says that even though the ecomony is bad, people are still looking for quality places to eat with good prices. He feels they will be successful in this economic climate because they have a high quality, fresh product for a good price, a good location and he is able to keep his expenses low and payroll down by actually working at the eatery along with Paolino and both their wives. Uffer says the business is doing three times what they expected.
