sunday dinner

I honestly am trying to figure out how to make the crust correctly, and needed some eggshells for my seed starting of carrots, sooooo I decided QUICHE I had some shrimp I needed to cook today, started with 1/2 an onion carmelized in olive oil, added about 5 huge handfuls of chopped baby spinach and about 14 shrimp, deveined and shelled, then in a bowl mixed up 4 eggs, 1/2 cup milk, dash of nutmeg and pepper, 1 cup of mozzarella cheese mixed with 1/2 cup flour.....let the cooked filling cool then added to the eggs and put in the homemade lard crust from the alton brown recipe with the salt omitted....

 

crust did not want to brown, and tasted like it needed something, not salt, now I am thinking sugar! next attempt I might add some, it came up nice and flaky but just not PERFECT...ahhh more work to figure it out!

anyone have a foolproof pie crust recipe to share? I really want to get this down, so I will not be tempted to buy the frozen pre made ones....was tempted to today!
