Fresh corn, green tomato and sweet onion salad with grilled chicken thighs
Fresh corn from a roadside stand is one of the greatest things about living in Skagit County. I sauteed a sweet onion hard in a little olive oil, added salt and pepper, the kernels from a single ear and the green tomato (it had fallen off my plant early) and cooked it all while the chicken grilled. Delicious. Total cost: $0.25 for the corn, about the same for a big sweet onion and around $0.50 for the chicken (part of a big package).
