Haul from Darkside Fermentation

Darkside Fermentation officially closed it's doors as a Brewpub in San Marcos to relocate to a production brewery so they can distribute their beers in South Texas in the near future. There was a big party on 2/11/12 at the Root Cellar Cafe where their beer is sold to see Darkside off into the sunset. I unfortunately could not partake in this party, but I had a proxy pick me up a case of their strange and hard to define Belgian styled ales.

 

Here are what these beers are from the brewer. I have not tried any of their beers so I am no authority. They all sound equally amazing and intriguing. I have 4 of each of these bottles and will be holding onto a few back ups for a while to note the maturation.

 

Mark of the Yeast:78666 : A GRUIT. Not a Quad or a Stout, A GRUIT. That means zeros hops in this batch. INstead, the bittering comes from my favorite legal, i mean local, psychotropics: Wormwood, Sage, Yarrow, and Elderberries. It aged in an Red Wine Barrel for 6 months then was blended with a similar, non-barrel batch. If Red Bull gives you wings, Mark of the Yeast gives you Pogo-sticks. 11% ABV.

 

Darkside Red: A Flemish Red Sour aged in an Oak Barrel for 8 months on 30 Lbs of Sour Cherries. Dry, woody, bretty with a subtle cherry sweetness in the aftertaste. 6% ABV.

 

Golden Mean: A Strong Golden, a la Duvel, with a lambic twist. Nice sweettart/fruity notes from the wild yeast, and it packs a punch at 10% ABV.
