Dorze Woman Making “False Banana” Bread

 

Bread made from the false banana tree, (Ensete ventricosum or enset) is the major food staple for the Dorze and some of the other tribes of southern Ethiopia. Pulp is extracted from the stems of the leaves and is cut and ground into a mealy paste that is fermented and then baked on an open fire. The result is a flat bread that is reported to have a banana like flavor. Enset is in the same botanical family as banana but only bears insignificant fruit; it is the roots and stems that are the source of nutrition.
