Mixing ii

This is after a minute or two of folding. I switched to a fork after this, since I wasn't pleased with the progress. I hate to admit this, but when I think of a dish with few ingredients, I think of it being quick and fast. Muffins are interesting, in that they are quick-breads and cannot be over-mixed, for fear of ruining the quality of the muffins. The same goes for brownies and other goods of that nature.
