oyster amuse bouche

A little spin on the classic oyster on the half shell.

Instead of the classic lemon, Tobasco, and horseradish. We used wasabi, serachi and a little grated grapefruit rind. We then made a smoke of black and green tea, covered the oyster for about 2 minutes.

Yummy cold smoke.
