Today, we visited Niagara's wine country and the cute little village of Niagara-on-the-Lake. This region is responsible for 80% of the world's ice wine. Ice wine is a sweet dessert wine that is somewhat unique because of how it's made. They basically wait to harvest the grapes until they are fully frozen (i.e. the temperature must be -12C - -8C for 3 consecutive days). We had the opportunity to try several of these as well as several local table wines. Some will definitely be making their way home with us because they were delicious and unique.
