Roasted veggies! We had a TON of veggies in the fridge from the last few weeks' CSA shares. So instead of letting them go to waste, I decided to roast them. On the left, there are green beans and garlic. The right is potatoes, pears, shallots, and garlic. And, not pictured, I did a combo of eggplant, tomatoes, green peppers, and garlic. I just drizzled each of these combos with olive oil and sprinkled salt and pepper on them. They were roasted at 425F for about 30 minutes. All were delicious...especially paired with bratwurst from our meat CSA :)
