Ginger cookies

I have an old receipe from my great-aunt. One batch makes about 120 cookies and I made 2 batches. It took me some 3 hours to bake them all. I replaced half of the amount of wheat flour with spelt flour and some of the butter with olive oil. Nice and soo tasty!
