Here, we can see where the bellows push against to actuate the switch. Pushing in turns on the compressor.
The temperature control provides an adjustable preload to the bellows, so that the bellows require more or less pressure to actuate the switch.
The defrost control is merely a mechanical offset to the temperature control to extend the range at the warmer end of the scale.
