Vanilla Pudding

Vanilla Pudding

 

½ C. sugar

3 Tbsp. cornstarch

Pinch of salt

3 eggs

2 ½ C. half and half

2 Tbsp. butter, softened

1 tsp. vanilla extract

 

In a small sauce pan combine sugar, cornstarch, and salt. Mix eggs and half and half, beating well. Stir the egg mixture into the sugar mixture over medium heat, whisk to prevent bumps, then stir constantly until mixture thickens, about 10 minutes. Stir in butter and vanilla until combined well. Remove from heat and refrigerate until well chilled then serve with whipped cream or ice cream if desired.
