Aujourd’ hui: Oriental Spices with classic French Technique

 

Filet from the Pork (sadly no Buntes Bentheimer Landschwein), rolled in Rosemary, Tarragon, Locvage and Chili with a Crust of Breadcrumbs, Butter and Raz-el-Hanout,

Sauce from Red Wine (Tempranillo) and Laurel,

Potato Cubelettes with Garlic, Tumeric and Cumin,

Grilled Heart of Lettuce with Olive Oli - Balsamico - Ginger - Mustard Dressing

Nahid Ansari one of the brides. Nahid and her sister Nazim are the focus of part of my film project. - every morning for a week before the weddings family members and relatives apply tumeric paste to the bodies of the brides and grooms. The tumeric adds a glowing color to the skin and also acts as a scub cleaning and refresing the skin.

Deydrated crispy kale! Blended pine nuts, ground hempseed, garlic powdrer, chili powder, tumeric, sea salt, fresh squeezed lemon, and, grapeseed oil. Dehydrate for 3-4 hours, at 110 degrees. Yummy and healthy snack!

Occurring once in every 210 days in the Balinese cycle of days, Kuningan is the end of the most important of the regular religious ceremonies for the 10-day Galungan period.

 

During this period the deified ancestors of the family descend to their former homes. They must be suitably entertained and welcomed, and prayers and offerings must be made for them. Those families who have uncremated deceased ones buried in the village cemetery must make offerings at the graves.

 

Kuningan takes its name from the fact that special offerings of yellow rice (nasi kuning) are made by colouring ordinary white rice with tumeric (kunyit). It is a time for family groups, prayers, and offerings, as their ancestors return to heaven.

 

This Galungan period is also a symbolic representation of a battle between good and evil, and the most important function of Kuningan is to celebrate the victory of good over evil so that the balance and harmony of the world can be maintained.

 

Unlike the more public processions of village temple ceremonies and cremations, most Kuningan celebrations take place in the privacy of the home, in the shrines of the family temple and house compound.

 

The day after Kuningan is a time for a holiday, visiting, and having fun.

Northwest Culinary Academy, Vancouver, BC..

Today I made a vegan potato salad for the kids to bring to our homeschool picnic tomorrow. While chopping veggies, I made dinner for myself, too. I made a raw dressing for the cooked potato salad. I blended olive oil, hemp seeds, dates, apple cider vinegar, tumeric, paprika, mustard seed, fresh parsley and cilantro, black pepper and sea salt. But, before I added the olive oil to the blender, I scooped out a little to add to my salad. Such versatility! :-)

I don't know who uses tumeric... What's the next clue?

Ginger Beer with tumeric also going in bottles tonight. At Farm Day, the kids got to participate in an art project. They used paint made from fruits and vegetables. This bee couldn't tell the difference between a real plant and the painting. The pink is beet juice, the brown is coffee, the yellow is tumeric and there may be carrot juice too.
