We rolled garden fresh zucchini and lettuce, piquantly dressed carrot and cabbage, fragrant baked fish, satayed pork and beef, and savoury omelette into rice paper, dunked it in a variety of mouth watering sauces and washed it all down with Saigon beer. Absolute. Heaven.
Loempia is the Dutch word for spring roll. Often these loempia sellers originally come from Vietnam.

made some pancakes, added toffee fudge sauce and folded them up to form springrolls. i don't think my pancake was particularly round...
I went out for dinner with a friend this evening before going to the Fred Herzog exhibit at the Vancouver Art Gallery. We went to Khai Thai Cuisine on Seymour St. This was the appy from their Gold menu.

The mother of one of my flatmates, God bless her, made this very delicious dish... She filled the rolls with minced meat and vegetables, very delicious!
Rice Paper
Firm tofu, cut into strips
1 cup glass noodle, cooked and chilled
Shredded cabbage, carrot
Cucumber, cut into strips
Favorite sprouts
3 tbsp Braggs
1 tsp ginger
1 tsp sweet chili sauce
1 tbsp water
Marinade tofu several hours.
Moisten rice paper and layer ingredients then fold.
Add 1 tbsp peanut butter to the marinade and whisk your sauce.
