No cooking this weekend. Dog needed a bath; quite an undertaking. Le Saigon takeaway to the rescue. These are their "pork meatball" fresh rolls. We usually get the shrimp version, which P is addicted to. The pork meatball/sausage variation is the polar opposite of the fresh-tasting shrimp roll, but the salty-sweet grilled pork was very moreish.
Really just some of the ingredients. We started at 9.30 A.M. and worked until 2.00 P.M. We made many dozens of spring rolls and won tons with a break to have Short Soup for lunch.

Yellow Fish is a common and popular fish around Shanghai and the Delta.
The idea to use it as an ingredient for deep fried spring rolls is refreshing. There are a lot of tiny morsels of fish in each roll, mixed with chopped vegetable, so each roll smelled kinda fishy. The texture was however, smooth and succulent and the rolls were quite umami. I am not sure if the umami-ness is coming from the ingredients or a generous hand with MSG.
The dip is a simple vinegar dip, which provides a good antidote against the fishy aroma. It also made the rolls a little more tangy and appetising.
Spring rolls have some kind of crunch stuff inside, can't put my finger on it, but added a nice touch to it.

We rolled garden fresh zucchini and lettuce, piquantly dressed carrot and cabbage, fragrant baked fish, satayed pork and beef, and savoury omelette into rice paper, dunked it in a variety of mouth watering sauces and washed it all down with Saigon beer. Absolute. Heaven.
