Here is the preschcool class at the COTN school in Banta Mokelle. You can see the teacher in the background, named Auntie Kris. We are very inspired by her--she is blind but still manages to keep these little munchkins under control! They sang Dana a few songs in English, and she in turn taught them another.

7 cookie sheets of these for Maddy's preschool tomorrow. Oh boy :)

I used:

2-200g bags of low fat pretzels

10 squares of unsweetened chocolate* (Baker's)

10 or so teaspoons of white sugar

Lots of sprinkles

Melt the chocolate in a double boiler, adding the sugar after the chocolate has melted. And stir. A lot. I let mine go for a good 15 minutes before I started dipping the pretzels so the sugar would have a chance to melt.

Take your pretzels (these are the larger ones, but you can use sticks or mini's, too) and dip one side in the chocolate. Warning - your hands will end up covered in chocolate, so if you don't want that to happen, use gloves or a pair of tongs to hold the pretzels. And the chocolate doesn't burn unless you stick your fingers right in it - I speak from experience.

So, dip your pretzels & lay them on a cookie sheet lined with wax paper. If you've got a little one helping you, let them be in charge of the sprinkles. We may have gone a bit overboard with them on a couple of sheets, but the sugar in the sprinkles will help sweeten the chocolate even more.

Once you've got them all be-sprinkled, place them in the fridge to set for a couple of hours. I'll be putting these into a container later to take to school tomorrow. Any that don't fit will go into another container & into the freezer to keep out of direct view (so I don't eat them all...).

*Why unsweetened chocolate? It's pure chocolate. The only allergy restriction in Maddy's class is peanuts and I'm not sure how severe it is so I didn't want to take any chances with any nut contamination. Baker's Chocolate was the only chocolate I could find that had no warning about 'possibile contact with nuts'... and yes, unsweetened chocolate is bitter and terrible, but that's why I added sugar. If you don't have any allergy restrictions, any chocolate is fine. Just be sure to keep the water in the double boiler from splashing into the melted chocolate - it'll go all wonky.

Enjoy!

The preschool children have been learning about trains and different types of transportation. They constructed a train in the classroom that includes three passenger cars, a steering wheel, remote controls and windows. To finish the unit, the children built their own train cars at home and paraded through the lower school. (Photo by Todd Race)

The Tues/Thurs Monument Preschool classes had a fun field trip to Canyon View Park where they played on the equipment, walked around the lake, fed the ducks, and caught crawdads. They even got to pet some baby goats. Fun!
