Foregoing the full order,we decided to have the Burger and fries. Thankful for the smaller portion, we were also thankful not to have to eat too much of it. Arriving somewhat cold to the table, the curds were still solid and the foie was the only contribution to melty-goodness. Would pass next time.

This poutine was done well. First, as you can see, the dish is a massive meal on its own and true kudos are in order for the one that finishes it (ahem, me. Ha!). The ground beef offers little morsels of flavoured meat (think chili or hamburger) combined with the subtle crunchy yet soft green peppers and firm yet soft cheese curds. The fries are made right with an edge of crunch yet soft inside. The poutine is well rounded and does't get washed away with the dousing of the gravy. Come with an appetite!

Poutine (Fries and Gravy)

2 tbsp. butter
2 tbsp. flour
2 c. beef stock
salt
fresh ground black pepper
2 lbs. Idaho white potatoes, peeled and cut
1/2 lb. fresh cheese curd
In a saucepan, over medium heat, combine the butter and flour. Stir until incorporated. Cook for 12 to 15 minutes for a dark roux. Stir in the stock. Season with salt and pepper. Bring the liquid to a boil. Reduce the heat to medium low and continue cooking for 15 to 20 minutes. Remove from the heat and keep warm. Peel the potatoes and cut fries, 4 inches by 1/2 inch. Bring a pot of salted water to a boil. Add the potatoes and blanch for 4 minutes. Remove, drain and cool completely. Fry the potatoes until golden brown. Remove and drain on paper towels. Season with salt and pepper. To serve, mound the fries into the individual (16 oz) disposable cups. Spoon the gravy over the fries and crumble the cheese. Serve immediately.
I tried Poutine because those crazy Canucks kept telling me it was delicious. French fries with gravy and cheese? Not very good IMO but then I'm not crazy.

As in, good poutine! It had been about a year since I had good poutine, which was when I was last in Montréal.
