Nous dînons au même endroit qu'à midi, avec une soupe de tomates et de carottes, puis la fameuse poutine.
C'est un plat de la cuisine québécoise composé, dans sa recette classique, de trois éléments : des frites, du fromage en grains et de la sauce brune.
Hangover Poutine: Turkey sausage, gravy, bacon, cheddar, a poached egg, cheese curds, green onions over tater tots.

A major element in any visit to a fall fair is the collection of food trucks offering a wide range of dishes, some of them improbable in any other context. This truck had a sign describing one of it’s feature offerings, specifically Pulled Pork Poutine. Not only is that a listing of offered delights but it also raises the important role of punctuation. You see, I could not decide whether the offer was for exactly as listed, pulled pork poutine, or if the listing was, instead, for two separate dishes: pulled pork and, by considering an implied comma following pork, pulled pork AND also poutine. I did not sort this out by experimental means but, instead, opted to capture the colours and the gentleman preparing an order. Taken using hand-held Nikon D800 fitted with an AF-S Nikkor 24-120mm VR 1:4.0 lense set to 58mm, ISO1100 (Auto ISO), Daylight WB, Matrix metering, Shutter Priority Mode, f/4.0, 1/250 sec. PP in free Open Source RAWTherapee from Nikon RAW/NEF source: Set final image size to 9000px wide, crop to a 5:7 format by cutting off some from each side of the frame to remove intrusive details, apply Tone Mapping as well as Dynamic Range Compression at default levels, set Exposure Compensation to EV-0.35 to darken overall (slightly), use te Shadows/Highlights tool to recover highlight detail, increase Contrast and Chromaticity in L-A-B mode, boost Vibrance a bit, applied some Noise reduction, sharpen, save. PP in free Open Source GIMP: use the Levels tool in Auto mode to get a reasonable tonality and colour balance, sharpen, save, scale to 6000 px wide, did NOT sharpen, save, add fine black-and-white frame, add bar and text on left, save, scale image to 3000 px wide for posting online, sharpen very slightly, save.

A note for non-Canadians: Poutine is a dish consisting of at least french fries, gravy, and cheese curds. Beyond those ingredients, the sky is the limit.
