I think brining the pork chops might eliminate the phenomenon where they're too dry and yet somehow still too oily at the same time.

Yeah. It's that small.

Since getting the stovetop smoker, I've been unable to resist using it. The smoke definitely imparts a new flavor to the food.

If you properly seared this thing, it should look like this or perhaps even darker.

Porkchop is our vet's potbelly pig. He will breakdance for a doughnut. Oh, yes, he will.
