Jaemor Farm Boiled Peanuts

In the South, boiled peanuts are part of the culinary heritage, though raw or not-quite-mature peanuts are traditionally used.

In a recent study, peanuts boiled in their shells had a significantly higher concentration of disease-fighting phytochemicals -- more than their raw, roasted, or oiled counterparts.

Nutrition in a Nutshell

The hulls of peanuts are loaded with polyphenols, and the skins are packed with flavonoids. Researchers suspect that boiling peanuts in their shells releases these heart-healthy antioxidant compounds into the water, and the amped-up water is in turn absorbed by the nuts. The result? One powerfully healthy peanut.

"Saururus cernuus has been used as a sedative and a poultice for tumors by early

settlers in North America, and for various wounds and ailments by different Native American

tribes (Phytochemical Database 2002), so it may still be used as a folk or herbal remedy.

Saururus cernuus contains lignans and neolignans, which have been shown to inhibit growth of

tumors, to suppress the central nervous system and to exert other physiological effects of

medical interest (Tutupalli et al. 1974, Rao and Alvarez 1982, Rao and Alvarez 1985, Rao and

Reddy 1990, Rao and Rao 1990), though chemicals derived from Saururus cernuus are not

currently being used for medical treatment. However, it was reported that Saururus cernuus is

the only natural product discovered since the 1950’s with neuroleptic properties (i.e., a

substance used to treat psychosis). Reserpine, synthesized from Rauwolfia serpentina in the

1950’s is used to treat hypertension and for the synthesis of antipsychotic agents (Alvarez

1981)."

Phyllanthus reticulatus leaves showed potential RNase H inhibition and protection against the viral cytopathic effects of HIV-1.

The herb Phyllanthus emblica has gained interest as a potential treatment for human bone disorders as well as diabetes patients.

Gaining attention for its potential effects against hepatitis B, research on Phyllanthus niruri has revealed possible antiviral activity also against human immunodeficiency virus (HIV).

Phyllanthus plants have been used in folk medicine used to treat a wide number of diseases. In Indian Ayurvedic medicine, various herbaceous Phyllanthus species are known as bhuiamla, a name previously assigned to P. niruri only. Bhuiamla is prescribed for jaundice, gonorrhea and diabetes (internal use) as well as poultices, skin ulcer and other skin problems (external use). Infusions are made from young shoots as a treatment of chronic dysentery. Not many of these supposed benefits, however, is established with modern scientific research.

The bark of Phyllanthus muellerianus, commonly called "mbolongo" in Cameroon, is used by pygmies as a remedy for tetanus and wound infections.

Phyllanthus muellerianus extracts are antimicrobial. Phyllanthus niruri may possibly help prevent stone formation/urolithiasis. Phyllanthus amarus root and leaf extract showed significant hepatitis C antiviral activity. Phyllanthus species for patients with chronic hepatitis B virus infection have been assessed in clinical trials, but no consensus regarding their usefulness exists. Phyllanthus acidus (leaf) showed antiplasmodial activity against Plasmodium falciparum. Phyllanthus reticulatus leaves showed potential RNase H inhibition and protection against the viral cytopathic effects of HIV-1.

Leaves, roots, stem, bark and berries of this genus contain lignans (e.g. phyllanthin and hypophyllanthin) and a variety of other phytochemicals.

Here's one that escaped the birds, since the blackberries are too big for the birds to consume easily. I've already picked 13 gallons of berries, much of which I will use for blackberry wine. I think there are three or four gallons more on the vines. Much of this I will use for blackberry wine.

Look at all those healthful phytochemicals!

Green is color of life! When it comes to the nutrient density of foods, green vegetables win

out every time. The green color of vegetables, fruits, nuts, and seeds comes from a pigment

called chlorophyll. Chlorophyll is the most abundant plant pigment in nature. The word chlorophyll comes from the Greek words chloros, meaning ‘green’, and phyllon, meaning ‘plant’.

Chlorophyll provides the green color found in grasses, leaves, and many of the foods we eat.

It is vital to photosynthesis, allowing plants to concert carbon dioxide and water into

carbohydrates and oxygen.

On its own, cholorphyll is not a phytochemical linked to human health, yet it plays a vital role

in the production of the many other thousands of phytochemicals and antioxidants that are.

Chlorophyll overpowers all the other pigments in plants, masking the other

colors that would be present if there was no chlorophyll. While different plant pigments do denote the presence of variety of healthful nutrients, when we eat green leafy vegetables, we are in fact eating all the colors, and all the phytochemicals associated with them.

In fact, the reason plants produce antioxidants like anthocyanins and carotenoids is to protect

themselves against the unstable free radicals that are generated when sunlight strikes the

chlorophyll. Therefore, the darker the green vegetable, the more chlorophyll it contains and

the greater its need for antioxidant protection. The antioxidants exist to protect the plant’s

cells; in turn, when we consume them, they protect our cells. Calorie for calorie, dark green leafy vegetables are the most concentrated source of nutrients of any food. The contain the vitamins (including vitamins K, C, E, and many of the B vitamins) and minerals (including iron, calcium, potassium, and magnesium) we need most to thrive. They are great sources of fiber and folate, low in fat, and high in proteins.

There are more than 1,000 species of plants with edible leaves! And most greens are

interchangeable in recipes, so be creative and adventurous! The options are bountiful.

Blue and purple foods make up just 3% of the average American’s fruit and vegetable intake

The most prominent antioxidants in blue and purple plants are a class of pigments called anthocyanins. The word anthocyanin comes from the Greek words anthos, meaning ‘flower’, and kyanos, meaning ‘dark blue’. Anthocyanins are found in many plants that span the red-purple-blue color spectrum. The shade of color is determined by the pH level of their soil environment. Anthocyanins turn bright pink in acidic soils, reddish-purple in neutral soils, and blue-green in alkaline soils. Anthocyanins help protect plants from damage caused by excess free radicals during photosynthesis. They also protect against oxidation in cell walls, and are therefore considered antioxidants as well as phytochemicals.

Red roses and blue violets also contain anthocyanins. In fact, many anthocyanins are named for the flowers that they pigment, including delphinidin (for delphiniums), petunidin (for petunias), peonidin (for peonies), rosinidin (for roses), chrysanthein (for chrysanthemums), tulipinin (for tulips), and so on.

While it is common for some fruits to contain four or five different anthocyanins, blueberries contain no fewer than fifteen! This unusually high concentration makes them particularly healthful, hence their popular designation as a “superfood”. Other antioxidants found in blue and purple plants include saponins in

eggplant, resveratrol in grapes, ellagic acid in blue and blackberries, phenolic acid in figs, and quercetin in raisins.

Studies have shown that adults who eat blue and purple fruits and vegetables have a reduced

risk for high blood pressure and low HDL cholesterol. The phytochemical compounds and antioxidants in blue and purple foods have also been shown to protect the heart and vision, promote mental focus, inhibit the growth of cancer cells, slow age-related memory loss, and prevent urinary tract infections.

Ingredients:

-1/2 cup Wild Blackberries

Blackberries:

Polyphenols found in dark berries may help reduce cognitive decline in older age by cleaning up cells that impair brain function, researchers at the Human Nutrition Research Center on Aging in Boston say.

Blackberries are also hugely fiber-rich—one cup has almost8 of the 25 grams you need daily.

-1/2 Avocado

Avocado:

We always have avocados on our counter. They are a big part of our diet. We toss them in smoothies, make guacamole and constantly eat them by themselves. These green gems contain almost 20 vitamins, minerals and beneficial plant compounds that will boost your smoothie real fast and make it extra creamy. They are loaded with heart-healthy fats that will keep your skin glowing and your tummy full longer.

-1 Cup of Pomegranate Juice

(I used Pomegranate Blackberry juice)

Pomegranate juice has been analyzed to have greater antioxidant capacity than red wine, grape juice, cranberry juice, green tea or acai juice. Drinking pomegranate juice measurably reduces oxidative stress (the toxic effects of free radicals) in healthy humans. Much research has shown that pomegranate’s potent antioxidant capacity provides protection against heart disease, cancer and cognitive impairment.

Health Benefits of Pomegranates

Anti-cancer:

Pomegranate has anti-inflammatory effects that may protect against cancer and other chronic diseases.

Pomegranate has anti-angiogenic properties, meaning that they may help to prevent growing tumors from acquiring a blood supply, preventing those tumors from receiving the nutrients that would allow them to grow larger.

Pomegranate is one of the few foods (mushrooms are another) that contain natural aromatase inhibitors. This means that they inhibit the production of estrogen, which can reduce breast cancer risk.

After treatment for prostate cancer, two studies have shown that pomegranate juice or supplements slowed the increase in PSA.

Protects Against Heart Disease.

Pomegranate phytochemicals reduce LDL oxidation (a contributor to atherosclerotic plaque development).

Pomegranate phytochemicals have blood pressure-reducing properties.

In a study of patients with severe carotid artery blockages, after one ounce of pomegranate juice daily for one year, there was a 30 percent reduction in atherosclerotic plaque. In striking contrast, in the participants who did not take the pomegranate juice atherosclerotic plaque increased.

Guards Memory and Brain Function

Pomegranate supplements taken before and after surgery prevented the postoperative memory dysfunction associated with coronary artery bypass or heart valve surgery.

We are all most likely familiar with the phytochemicals Carotenes and Anthocyanins that color the red leaves in fall. Warm sunny days, with nighttime temperatures below 45 degrees Fahrenheit but above freezing, raise the level of red coloration. The timing of the color change depends on multiple factors, weather, latitude, elevation, and the local microclimate. In discussion, we have been talking about anthropogenic effects on the environment and specifically the urban heat island effect. I think that the urban heat island effect creates it's own microclimate, causing leaves to change color later in urban areas than in forest dominated. A group of researchers studying flowering rates of trees in urban settings found, that when compared to their forest counterparts, urban trees flowered significantly earlier in spring. I would extrapolate that it may be possible that trees take longer to drop their leaves due to urban warming as well. Thankfully, this probably does not alter their role in depositing nutrients. Leaves contain calcium and potassium, which the trees’ roots took up from the soil. Decaying leaves recycle the nutrients back into the top layers of the soil. The humus produced by the decaying leaves is also important for conserving water in the forest soil.

Medicinal Plants of Asia and the Pacific, Christophe Wiart

A cancer diet includes a rainbow of vegetables for a balance of nutrients and phytochemicals.

Iochroma is a genus of about 34 species of shrubs and small trees found in the forests of South America. They range from Colombia to Argentina or when certain species are excluded (see below) from Colombia to Peru. Their hummingbird-pollinated flowers are tubular or trumpet-shaped, and may be blue, purple, red, yellow, or white, becoming pulpy berries. The cupular (cup-shaped) calyx is inflated in some species. The leaves are alternate, simple, and entire.

Iochromas are cultivated as flowering ornamentals and in cooler zones (zones 7-8/9) make useful patio shrubs for summer display or conservatory plants. The majority are not frost hardy and must be overwintered under protection. In warmer zones (zones 9-10) they can be used as landscape plants. They are commonly trained as standards (topiary) to control their size and shape. Iochroma flowers attract hummingbirds (Americas only) and bees to gardens.

Like many plants in the Solanaceae, Iochroma species contain phytochemicals with potential pharmaceutical value but the genus has not been exhaustively studied in this respect. Iochroma fuchsioides is taken by the medicine men of the Kamsa Indians of the Sibundoy valley in the Colombian Andes for difficult diagnoses, the unpleasant side effects lasting several days (Schultes & Hoffman 1992). A variety of withanolides (Alfonso et al. 1993) and hydroxycinnamic acid amides (Sattar et al. 1990) have been isolated from Iochroma species.

The family Solanaceae is further divided into subfamilies, tribes and subtribes. Iochroma is in the subtribe Iochrominae along with the genera Acnistus, Dunalia, Eriolarynx, Saracha, and Vassobia.

With the increasing demands of herbs and herbal supplement, many researchers are now introducing many preexisting herbs with tremendous health benefits. One such interesting herb is the Butea superba. Because of its most interesting health benefits, Butea Superba is gradually becoming very popular. This is one of those few herbs that has multiple of health benefits, including fatigue reduction, stimulating male fertility, improving the conditions in cancer patients and even lowering cholesterol.

Butea Superba is not new in Asia. It seems people in Thailand are aware of this botanical native for many years. In Thailand, this herb is traditionally used men to enhance male fertility and improve the sexual libido at an older age. Thai people also call this herb as the “rejuvenating herb.” After a number of researchers, it has been clear that this herb from the Papilionaceae family has several health benefits. Out of many of its species, only two varieties are commercially grown. Although there are very few scientific pieces of evidence to support the health benefits of this herb as a natural sexual enhancer, many users claim to have benefited from using this herb for a period of time. After a lot of online searches, I have come across some of the top health benefits of this herb.

Here is the list.

Butea Superba and its health benefits.

Male fertility enhancer:

People in Thailand already use this herb for centuries now. For them, this herb is a natural male performance booster. Butea Superba does contain some phytoandogens, which act as the androgenic hormones found in males. These hormones help men getting rid of fatigue, increase their muscle tone, improve their stamina and enhance their fertility. Those struggling with low energy and minimal strength can strongly benefit from this herb and its supplements. The male hormone-mimicking substances in Butea Superba naturally helps a person experiencing a boost in libido and sexual performance. Men with erectile dysfunction can also be benefited by using this herb. The positive hormonal effects of this herb can improve this health condition in males.

Cancer Treatment:

Although there are not many scientific pieces of evidence to prove the effects of Butea Superba and its effects on cancer, studies have claimed that this herb has some anti-carcinogenic effects. The phytochemicals present in this herb help in preventing a number of enzymatic reactions that usually occur inside the body of a cancer patient. Butea Superba can actually prevent multiplication of cancerous cells by blocking certain signals.

A cancer diet includes a rainbow of vegetables for a balance of nutrients and phytochemicals.

Never seen or heard of one of these, so I thought I'd share the information with you!

They are priced at £49.99 (VAT free).

Information from the WEB:

Jackfruit is the largest tree-borne fruit in the world, weighing up to 40 pounds or more.

Is jackfruit healthy?

Like many fruits, jackfruit contains some fiber for healthy digestion and very little fat. A 100-gram portion of jackfruit has:

95 calories.

2 grams of protein.

0.6 grams of fat.

3 grams of fiber.

Jackfruit also contains vitamins, minerals, and phytochemicals that have health benefits. It’s a good source of:

Vitamin C.

Pyridoxine (vitamin B6).

Niacin (vitamin B3).

Riboflavin (vitamin B2).

Folic acid (vitamin B9).

Calcium.

Magnesium.

Potassium.

Phosphorus.

“The combination of potassium, fiber and antioxidants can benefit heart health,” Ilic says. “Jackfruit also contains flavonoids and lignans, plant compounds that may help fight inflammation.”

ref: 1012 -24th March 2022

The outer shell of the fruit, its exocarp, is firm (softens during ripening), typically 4-6 cm in diameter, and contains astringent phytochemicals which discourage infestation by insects, fungi, plant viruses and bacteria. The same phytochemicals are pigments giving the exocarp its characteristic purple color, including phenolic acids. These pigments have antioxidant properties which afford the fruit further protection from ultraviolet radiation and free radicals generated during photosynthesis. Isolation of exocarp pigments has permitted their identity to be revealed as xanthones, mainly garcinol and mangostin[1], which, as phenolics, make the exocarp highly astringent and inedible.

Cutting through the shell, one finds edible flesh, botanically defined as an aril, shaped like a peeled tangerine but bright white, about 3-5 cm in diameter, nested in a deep red outer pod. Depending on the fruit size and ripeness, there might be seeds in the aril segments. The seeds, however, are not palatable unless roasted. The number of aril pods is directly related to the number of petals on the bottom of the pericarp. On average, a mangosteen has 5 aril segments (round up figure). The plant does not start producing fruit until around 15 years old, which is somewhat an impediment to cultivation.

Group hug! The four of us would often share the same 6' x 10' cubicle. Here we're hugging as I say goodbye for the last time. I would be leaving the next day for Ely, MN, to spend the rest of my summer vacationing at our cabin on Burntside Lake.

Catherine Harris: I completed jobs for her that she was sent from Heather and even sat in on some meetings of HealthEtech. We did great together and there was an added benefit of insight on medical school preparations from Catherine, in return for which I shared helpful advice on nutrition I had discovered on the web and elsewhere. Catherine was both soft-spoken and dedicated to those around her, and though she might not have thought the folder-making jobs were fun, she allowed me enough freedom to make them that (as I could listen to my iPod and even, ^_^, practice marching around the table I used to construct them).

Emily Biltoft: Often Emily was the only one left in the cubicle as the others went to meetings and such. She was a treat to chat with and her smile broke the monotony of our jobs there.

Debbie Vargas: I had little known Debbie until one day when I overheard her question about "phytochemicals." I offered up the best description I knew at the time and in the process I learned about her work with Texas On the Move and her desire to make nutrition and exercise programs interesting and unique for kids and adults. I offered to help out with her project, even sat in on a meeting, and gave her friendly advice about what I had found. I'm still interested in working on the project though she's moved on, for her field of public health was made interesting to me by Debbie. Other than that, Debbie was vibrant and fun to be with, and I wish her the best with her Masters in Public Health.
