Cocoa powder, which comes from the cocoa bean, is highly nutritious, and can provide numerous health benefits. Also, cocoa is rich in flavonoids, which help lower blood pressure, reduce inflammation and boost cardiovascular function.

Quinoa Onion Frittata is a savoury dish made with quinoa, onions, and bacon in a seasoned egg base. Quinoa a highly nutritious plant seed, first domesticated in the Andes Mountains of Peru thousands of years ago. It was a cultural and culinary food of high significance to the ancient Incas, being one of their most important food sources. It is still an important food source and cash crop there today. Quinoa is a complete protein, containing all nine essential amino acids, and is also very high in iron, fiber, health-protecting flavonoids like quercetin and kaempferol, and minerals, like manganese, magnesium, and phosphorous. It is now grown in many other countries that have growing conditions similar to the Andes. This recipe came about when my brother-in-law, an agrologist, experimented with growing quinoa in the northern mountains in British Columbia, Canada.

 

Recipe

 

4 slices bacon (4 oz/110 gms)

2 cups diced onion (1 large)

½ teaspoon dried thyme

3 cups (720ml) cooked quinoa

1 teaspoon fine sea salt

½ teaspoon coarsely ground pepper

1 teaspoon dry mustard

¼ teaspoon ground bay leaf (optional)

½ cup sliced green onions (about 4)

8 large eggs

 

Preheat the oven to 325°F (170°C). Liberally grease a 10-inch (25cm) deep pie dish or quiche pan.

Dice the bacon into ½-inch/1cm pieces.

Saute the bacon pieces in a heavy skillet, over medium heat, until they are nut brown and crisp. Do not drain off the bacon fat. Add the onion and thyme and saute until the onion is translucent, about 5 minutes.

While the onion is cooking, place the cooked quinoa into a large bowl. Add the salt, pepper, mustard, bay leaf powder and green onions. Toss well to combine.

In another bowl, beat the eggs well.

Add the bacon and onion to the quinoa, scraping in all the flavourful bits from the skillet.

Add the eggs, and stir to combine. Pour the mixture into the prepared baking dish.

Bake for 35-40 minutes (5 minutes less if you use a glass pan) or until the center of the frittata feels almost firm and only jiggles slightly if you move the pan. It will firm up as it cools.

 

Let cool 10 minutes before cutting into wedges. Serve warm or at room temperature.

Serves 6.

I think my friends have some sort of weird oral fixation.

Blue camas are a traditional food source for the Nimíipuu (Nez Perce), who still harvest the roots of blue camas at Packer Meadows, where this photo was taken.

 

"Camas appears to be a good source of iron, although iron from plant sources is not always available to the body. One cup provides a little better than half the Recommended Dietary Allowance for men or one-third the allowance for women."

 

Note: only the blue camas are edible. Other varieties, such as meadow DEATH camas, are not.

I had no idea the nutritious value of cat tails. I mean, they are quite intriguing to look at and feel, but consuming one never crossed my mind. Native americans used them for many things, so I felt this was appropriate 365 as I was discussing my native american heritage today (which I rarely touch upon).

On another note, my anxiety attacks are getting more frequent by the day, and also migraines. So I attempted an oil painting for the first time and I'm quite proud of the outcome, considering I mostly draw stick figures and scribbles. I'll post it in a comment below:

These are very nutritious leaves that grow on a small tree in our yard. They are cooked and mixed with peanut butter and onions to make a dish called copto. Yum! No really!

Getting your child to eat nutritious foods can be difficult, but finding healthy and appealing drinks for your child can be just as tricky. Does the taste of pure milk seem unpleasant to you or your child? Or have you invested years in expensive over-the-counter supplements for your family? I can assure you that from now on, you will not be forced to return to processed "healthy drinks". Nor will you have to look at commercially available "Milk masala powder" that contains no nutrients other than sugar, preservatives, artificial colors, and flavors.

 

Tea or hot milk works like medicine for many of us. When the day is not going well, we know just the beverage that can fix it or at the least gives us the energy to deal with it. Moreover, when it is going well, a cup of tea can make it even more wonderful. So, for better or for worse, these beverages are what keep us going. Tea is not originally Indian. It was invented by the Chinese, which then the British culturally adopted and made their own. Irrespective, we have wholeheartedly embraced this magical ‘Chai’.

At this stage the lovely fiddleheads are sold along by the bagful at roadside stands in Maine and in supermarkets. They are a wonderful, nutritious green, and can be made into salads, stirfried, or steamed with other greens. I think this bunch standing together make a lovely bouquet.
