砂锅银面虾米 119. Dried Shrimp w Silver Noodle in Casserole
This was somewhat of an unusual adventure for me - more than a scouting mission than a meal, really; still it was very enjoyable. On my ride back home, I decided to talk about this one dish supper ( I was dining solo - as such, I had to make it a one plate event) in a form of a magazine article, rather than in a more traditional for me "food picture with a short story" format. Afterall, I have been heavily criticized, if not ostracized, by the food-writing community for not having a traditional food blog, so this is my opportunity to show a bit more of my writing and a little less of my food photography, although the food at the No-Name Happy Garden restaurant most certainly deserves a full picture set - at some point I would like to present you with one, if I may.
On my recent trips to Flushing, I noticed a relatively sizable, by Chinatown standards anyway, storefront. Two things have consistently caught my attention: - the restaurant was always full, especially so during lunch hours; and there was not one sign of what the restaurant might be called in English - not one letter or picture, let alone a word. Indeed, I have asked some Chinese-speaking friends of what the place might be called - there was no consensus. Noteworthy, the no-name restaurant that caught my sight is located literally across the street ( Main Street, as it was) from the, not quite much but still, acclaimed, Lake Pavillion - a new Flushing restaurant that instantly made it the CHOW List of the "New York’s 10 Best New Restaurants of 2012". Anyway, the no-name place looked intriguing.
The last few days were extremely challenging for me and most people I know; truth be told I was having a tough time finding a friend who would be awake, let alone hungry for a unknown style Chinese food adventure - and so I went by myself. Alone.
No-name Happy Garden is located just north of the I-495, also known as Long Island Expressway, on the west side of the Main Street. Ironically, the place is somewhat easy to miss - no usual restaurant suspect signs keep the restaurant hidden in the plain sight - it may even be done on purpose of attracting only the appreciative clientele and the ones "in the know", if you will.
The no-name Happy Garden looked like a typical Hong-Kong Chinese restaurant, albeit a bit different from the more americanized versions thereof - the decor is sparse; red and gold colors are visible, although not dominant; servers talking in the back - in simple words, the restaurant looks more like a canteen than anything else. There are differences, however - invisible to the takeout crowd, but obvious if you look a bit deeper. First, there was not one bottle of the stereotypical foodservice soy sauce anywhere in sight - clearly, they take pride in knowing how to season their food, I thought ( in case you are wondering - pillars of Chinese restaurant art, e.g. "Spring Moon" restaurant in Hong Kong's Peninsula hotel do not spot any soy on the tables either) - a tiny detail, but it peaked my interest even further. I also noticed a few other signs of an authentic Chinese restaurant: although served if requested, rice does not show up on your table just because your ordered something - it is more about food and proper pairings. Another thing that looked unreal to me in today's restaurant scene - the no-name Happy Garden has a separate room for cigarette smokers - I assume the food is served there as well. In fact, quite a few patrons chose to be seated in the back - smoking is still quite prevalent in China, clearly the needs of that sizeable group need to be and are also met ( I do not recall any other restaurant with a smoking section anywhere in New York, by the way). No-name Happy Garden also has Banquet halls with their separate menus - the latter run $428, $338, $528, $398, $638, $538 - do you see a pattern? "8" is a lucky number in Chinese culture - and another good food harbinger, I thought.
Speaking of the food itself: if you wish to sample and enjoy it at the no-name Happy Garden you are going to need 5-6 people and one of you better speak Cantonese, otherwise there is no point going - not one person, a server or a superior, spoke any English whatsoever, and I mean - none. The only sign in English would warn you about "No Credit Card Cash Only" policy and that is it; no English is spoken anywhere by anyone. That said, Chinese hospitality was there - my tea appeared instantly, before I even had a chance to settle in my seat; everyone was cordial and willing to help - "Translator" on the iPhone was my best friend for a moment. Although the menu is bilingual, it is largely useless - Chinese restaurant patrons order food differently: most do it by memory; a lot of restaurants have the specialties for which they are famous - I am going to find some help and will tell you what they are at the no-name Happy Garden just as soon as I can.
I did notice a few interesting things on the menu, however: any soup can be served Hong Kong style ( Chinese family of five at the table next to me clearly requested one as soon as they walked in - there is a good possibility their server did not even need to hear their order, however); whole fish is omnipresent and is offered in many styles - Chinese eateries are often judged by how well they prepare fish: steamed whole with ginger, garlic and scallions is one of the all-time favorites; pan-fried whole flounder, sole or some other flat fish is another. The menu had all the expensive delicacies, but I was more impressed by the casseroles, congees and easily one of the best tofu menu selections I have seen - however, and again, the menu is only needed if you are a stranger, in which case you are most likely going to miss the best food. Needles to say, I was the only non-Chinese patron in the house - the house was not full, but it was not empty either. Anyway, and I am guessing, solo English speaking diners are not the coveted demographic at the no-name Happy Garden - still, I felt strangely welcome.
At this point I realized the menu and style at the no-name Happy Garden are a variation of Cantonese, although I can not offer you more details than that, at this point ( I latter asked the Chinese family across from me - indeed, Cantonese was the name of the game).
OK, so now we can talk about the food - my "Silver Noodle", if you will. I ordered the proverbial #119. for a number of reasons: - I wanted a noodle soup ( similar to the Biáng! fare, but no-name Happy Garden is a Cantonese eatery, not Beijing-style, and, like I said, communication was a huge challenge anyway; also, dried shrimp with cabbage stir-fry is one of my huge favorites - both as a cook and as a diner, this was pretty close and so I ordered it by memory, so to speak.
My casserole came sizzling and steaming - great and much-sought by the Chinese sign of good, delightful and fresh food. Indeed, I was quite pleased too. The casserole itself was outstanding - not one flavor note was out of balance: garlic, umami, brine, gelatin - all were there, neither was more pronounced than the others. Seasoning was perfect - none was needed; my casserole was not lacking salinity but did not need any more of it either. Ginger shreds were there once, but it was welcome, slippery flavor of the noodles ( another Chinese sought-after preference) were absolutely delightful. My dish was hearty, but not greasy - it was most likely of a streamed variety, which actually worked out and even got some some extra cred as I also ordered a 两种口味的包子#137. Two Flavor Buns - three were fried, three were steamed and all were served with sweetened condensed milk; my choice clearly got some signs of approval - mixing cooking techniques in Chinese dining is appreciated. Truth be told: I was not look for anything savory - in fact, I was hopeful that buns would be of the Bao variety, but no such luck this time. Agaim bottom line - my noodles were excellent. As I was about to finish my meal, I noticed a few other things served around me - fried lobster was a delicacy the family next to me ordered on what was clearly a mid-week dinner - I am guessing the market price was reasonable for the group of five. Finally, and I was about to take off already, I noticed some stir-fried variety of choy being served at the table next to me - it was perfectly cooked to bright, saturated green; it looked crunchy, well seasoned and full of fresh taste: "I need to come back to eat here properly" - that was my only thought.

1) It's possibly the most photographed bridge in the world.

Kohn is a seasoned Ta-Matoran Field Medic who worked within the Overguard: the Matoran-conscripted military force overseeing Yerinn. Kohn was well known for his peculiar 'No Pain, No Gain' philosophy to his treatments: Once he was certain his subject was out of immediate danger, he would assess his patient's behaviour leading to their injury. If he found fault in him or her (the patient was careless around the offending machinery, for example), he would exercise brusqueness that severely reduced the pleasantness of his service; it was not uncommon for patients to be withheld painkillers, left larger than necessary scars, or at times turned away altogether - all in the name of 'building character'.
Kohn would remain completely indignant while receiving complaints from his peers, and would grumble about his peers 'general lack of common sense' and 'innate incompetency'. For in fact, Kohn possessed a sincere and heartfelt fear that his nation's complacency would lead to demise when, not if, disaster struck.
Just like he had done many times over, he was proven right when 'The Shattering' reduced Yerinn to a smoking, dying wasteland. His expertise in surgery was invaluable while gathering survivors (he exercised much more sincerity during this time), and though things have changed immensely, by the newcoming Toa Alverh's watch Kohn continues to do as he has always done.
It has many infamous names: Monster Zero, The Golden Demise, The One Who is Many, the Rainbow Serpent, the Hydra, and so on. Either way it has always been described as the largest and most destructive monster in Godzilla's rogue gallery. It travels around as a living hurricaine, charging itself with electrical power, and each head can think independently. Most depictions describe Ghidorah as a serpent from outerspace.
