I ate them with some pasta...Great!
Strobist: A Soligor 420Z Zoom Flash was triggered by the EOS 400D Camera Flash (Correction -2). The Soligor Flash was placed over the pan and bounced on the white wall behind it.
Recipe:
You need:
1. A pound of minced meat flavored with mustard, salt & pepper rolled to 11 meatballs
2. Some chili's, olives & capsicum
3. Tomato soup powder mixed with whipped cream instead of water
4. A quarter pound of mozzarella
Put the meatballs and the no.2 stuff in a casserole or a pan, pour the sauce over the meatballs and add the mozzarella on them.
Now put the casserole in the oven and bake it 30 minutes @ 200°C / 390°F

spaghetti with a sauce made with tomato sauce, tomato paste, garlic, dried oregano, and fresh basil along with homemade meatballs
Makes enough for two hungry people for a full meal with a side, or enough for 3 people in a broth, or enough for 4 people as a part of a main.
500g minced pork
3 slices pancetta
3 medium red/green/mixed fresh chillis
2 stalks lemongrass
3 shallots
3 cloves garlic
Small bunch of fresh coriander
1 lemon
1) Put the minced pork into a huge bowl for mixing. The huger the better, but it should fit in the fridge.
2) Wash the coriander really very well. Chop it all very finely and discard the stems.
3) Chop everything else except as finely as possible and add it to the minced pork. Leave the seeds in the chillies unless you are a real pansy. Squeeze half a lemon over the whole lot.
4) Mix it with your hands.
5) Cover with cling film and leave in the fridge for an hour. Warning: it will give-off toxic (but pleasing) fumes.
6) Fashion meatballs according to your whim. Prepare them onto a large chopping board. Large ones are more fun, small ones are easier to control*. Optimum size is approximately a large egg. Optimum shape is to flatten the sphere slightly to allow for nice golden crisp on the outside.
7) When done, lower them into a large heavy based frying pan of hot oil. Don't crowd the pan, do them in batches.
Great served with bread and chilli dipping sauce.

I'm a certified Pasta-Lover! This pasta is so yummy. I sauteed some white button mushrooms and added Italian Seasonings to them. I used Pizza Sauce and Roman Cheese and put it on the pasta. The Meatballs are made from Jackfruit. I'm always looking for something different and non-meat oriented to try and I'm happy I tried these, I really like them.

I got a pound of ground beef and half a pound of ground pork from my CSA share last Wednesday. It was unplanned since I would rather get more vegetable. But of course, when life gives me ground meat, I make meatballs. When it comes to all things comfort food, I can't think of a better source than Pioneer Woman.
I sent little brother to buy some fresh pasta from St Lawrence Market on Saturday and he came back with these lovely pale green basil spaghetti. I love the taste of fresh pasta. There's just something about it that dry pasta cannot measure up. I made the recipe as written except for one small change. I was running late and the sauce could use more slow simmering to further thicken up. I cheated by adding a healthy splash of cream and it turned into the perfect consistency very quickly. I think it's a cheat that Ree would approve. :)
About those meatballs...so tender! I absolutely love them (and so did B). The breadcrumbs were made from stale baguette that I stashed away in the freezer. Ree was right about the juice of the meatballs flavouring the homemade tomato sauce. My recipe turned out 30 meatballs and plenty of sauce. I think dinner for this week is all set.
Got an early start on Tuesday: Salad and fixings, teriyaki pineapple chicken meatballs, sourdough bread, lychees, and homemade brownies. Not pictured: removed a lychee to add a little canister of Japanese sesame soy dressing. All in the Nissan Stainless lunch jar bowls (same size as Mr. B).
