Pork meatball soup by mom! This is super easy to make and real chinese food. here for more pics

 

Ingredients:

1 pound ground pork

1 egg

1/2 bunch parsley leaves, chopped

2 tablespoons minced fresh ginger

3 tablespoons soy sauce

1 teaspoon salt

1 teaspoon sugar

2 pounds ash guard, cut into 1 inch cubes

1 teaspoon salt

 

7 cups water

 

Directions

 

1. combine ground pork, egg, salt, sugar, soy sauce and ginger in a large bowl. stir till well mixed and sticky.

 

2. bring water, ash guard, salt to a boil in a large stock pot. reduce heat to medium and simmer for 4-5 minutes. Take 1 tablespoon of the pork mixture and gently drop it into the soup. simmer 7 - 8 minutes more till meatballs cooked.

 

You can also added onion to the meatball mixture as well and replace parsley with spinach or other favorite veggies.

Ingredients:

 

Beef or chicken meatballs (home made or supermarket made) approx.20-25 small sized pcs (Serves 4).

Flour (enough to dust meatballs)

Spaghetti or taglatielli pasta (for 4 persons)

X 4 tbs of garlic olive oil or normal extra virgin olive oil

X 1 tin tomatoes (regular size tin)

X 3-4 garlic cloves (more if you are addicted to garlic like me!)

X 1 small green or red pepper (optional)

X 1 small onion

A slug of white or red wine (to taste)

X 1-2 tsp sugar (to taste / optional)

X 1 tbs of worcester sauce (optional)

A handful of fresh basil (to taste)

A handful of fresh oregano (to taste/ dry can also be used)

X 1 tbs of pimenton

Beef o chicken stock 400-500ml (dependant on meatballs used)

Chilli flakes / tabasco sauce (to taste/ optional)

Parmesano Reggiano or any Italian hard cheese to garnish

Salt / pepper (season to taste)

 

Preparation:

 

Dust meatballs in flour evenly coating them (flour will thicken sauce whilst cooking later)...

Pan fry in olive oil (only use X 2 tbs oil/ medium - high heat) until golden brown, turning only twice, then remove from pan...

Dice or chop garlic, green pepper & onion and fry in same pan,(medium heat) with juices of meatballs and the remaining olive oil until pepper/ onion is soft (dont burn the garlic).

Start boiling the pasta in salted water.

Add wine and reduce (to de-alcoholize), then add stock + rest of ingredients including meatballs (excluding 1/2 of the fresh herbs) until cooked and sauce is thick and Tasty!

Plate pasta, serve meatballs on top & garnish with remaining fresh herbs and the grated parmesano cheese.

  

Tips:

 

.. You may 'pasa pure' the garlic, pepper and onion for a smoother less rustic sauce!

.. Add some double/ single cream for a richer creamier Sauce!

.. Use freshly made pasta if possible!

.. Left over meatballs can be used next day and eaten in a nice piece of rustic bread with cheese and extra tabasco sauce!

FIRECRACKER CHICKEN MEATBALLS

 

This is my favorite way to eat chicken meatballs. They’re spiced up with a sweet, savory, and spicy firecracker sauce. They’re tender, filled with flavor, and require minimum work!

 

Firecracker Chicken Meatballs

 

INGREDIENTS:

 

MEATBALLS:

 

· 1 ¾ – 2 pounds ground chicken (or turkey)

 

· 4 teaspoons minced garlic

 

· 1 ½ teaspoon salt

 

· 1 teaspoon pepper

 

· 2 large eggs

 

· 1 cup Panko breadcrumbs*

 

· ½ teaspoon paprika

 

· 1 teaspoon onion powder

 

FIRECRACKER SAUCE:

 

· ½ cup hot sauce (I recommend Franks)

 

· 1 cup light brown sugar

 

· 2 tablespoons apple cider vinegar

 

· ¼ teaspoon salt

 

· ¼-½ teaspoon red pepper flakes (depending on spice preference)

 

DIRECTIONS:

 

1. Position 2 racks near the center of the oven and preheat the oven to 475ºF. Line 2 baking sheets with parchment paper, set aside.

 

2. In a saucepan, combine the ingredients of the firecracker sauce over medium high heat, allow to come to a boil, reduce the heat so it simmers. Let simmer for 8-10 minutes. Remove from heat and allow the sauce to cool. The sauce will thicken as it cools so don’t worry if it looks thin.

 

3. In a large bowl, combine the ground chicken, garlic, salt pepper, eggs, panko, paprika, and onion powder. Use your hands to mix all the ingredients together. It’s easier to tell when he ingredients are combined when using hands. DO NOT OVERMIX, it will result in drier meatballs.
