Meatballs made by my parents for the wedding. It had a sort of hawaiian sweet flavor. Delicious!
SWEET & SOUR MEATBALLS
(double for a large crock pot)
Meatball's
2 lbs - ground beef
1 cup - soft bread crumbs
1 - egg
1. med onion chopped fine
1/2 - green pepper chopped fine
1/4 cup - milk
1 clove garlic crushed fine
1 1/2 TBS soy sauce
Mix, shape in small balls - fry in oil
Sauce
1/2 cup Vinegar
1/2 cup soy
1/4 tsp ground ginger
1/2 cup water
1 Cup brown sugar
2 TBS corn starch
Mix - Cook until thick
then add
1 can 13 /1/2oz pineapple tidbits
1/2 cup finely sliced celery
1/2 sliced green pepper
Today's menu was spicy meatballs with brown rice, olives, hummus and chocolate on the side.
I've never been really good at cooking, but I still like to do that every once in while. I can prepare something decent if I go by the recipe and have all the ingredients at hand. I've never been able to produce something good just by going to the store and grabbing some stuff and putting them together (warning: do not try strawberries with melted blue cheese on top). Today, however, I was feeling hungry after the hike I did. I kinda remembered the ingredients for traditional Finnish meatballs and was close by the Andronico's Market so I decided to give it a try. I forgot some ingredients, but added some new interesting ones. Besides from being very fragile the meatballs actually were good! Quite spicy as well.
Here it is, the recipe for Spicy Meatballs ala Antti:
1. Mix 2 dl of cream with 1 dl of crushed cream crackers and let them sit for a while.
2. Chop one big red onion and mix it with the cream stuff.
3. Chop a bunch of chives and mix them with the others.
4. Add the following ingredients to the same mess:
- 500g of ground beef
- 3 table spoons of ground black pepper
- 3 table spoons of quite spicy chili paste
- 2 squirts of very spicy hot sauce
- 100g of soft swiss cheese (i guess adding some cream cheese would be fine too)
- a squirt of Pinot Noir
5. Squeeze half a lime in there as well.
6. Mix it all with your hands so that everything is spread out evenly.
7. Then make balls out of the mass and fry them on a pan.
Meatballs in orange sauce (leftover from orange chicken a couple months ago and frozen) with peas and onions, rice with carrot and red bell pepper flowers, grapes, and a lemon raspberry yogurt parfait. Honey & milk and strawberry pocky are peeking out from the utensil slot. We really need to get to the grocery store. I've been raiding the freezer hard the last couple days.

I'm amazed at how smoothly today has gone~~Meatball was finally released from isolation and got to mingle with the other inmates. No fights, no hissing, no shanks were drawn. The door to his cell remained open where he retreated to from time to time. The others would come in to look around but not stay very long.
Patient #1 (Meatball) is recovering well. I now have patient #2 to care for--my husband had surgery on Monday. Middle of this month if all goes well patient #3 (Little One) will be coming in to get integrated. Let the hairballs fly.
For my mom's birthday I gave her 5 home cooked meals of her choice. For her 2nd meal she asked me to make her mom's meatballs and lemon meringue pie. I mostly followed the recipe except I added garlic and 1/4lb of chorizo sausage in place of 1/4lb of pork. My mom loved them, I determined I don't like ground meat.
Chicken Meatball Soup:
1 cup pearled barley
1 cup water
Soak Barley in 1 cup of water for 5-8 hours in a covered bowel (not refrigerated), until most of the water has been absorbed and barley has swelled to make roughly 2 cups of barley.
For Meatballs:
4 boneless chicken breasts
1 cup fresh chopped basil
1 medium onion, chopped
2 tablespoons worcestershire sauce
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon cummin
1 teaspoon chili powder
1 tablespoon garlic powder
1/2 teaspoon thyme
Cut and grind the chicken breasts, basil, and onion with medium to medium small grinder as if you were making sausage.
In leu of a grinder, you can use 1 1/2 lb of ground chicken, and use a food processor to make a paste of the basil and onion
Add to mixture all of the above dry ingredients and mix until completely combined, cover and refrigerate until mixture stiffens(about 1 hour)
The vegetables:
In a large stock pot (8quarts or larger:
3 tablespoons olive oil
1 cup cut mushrooms
1 cup red/or green bell pepper
2 cups chopped carrots
2 cups chopped green cabbage
Sautee until cabbage is softened, about 10 minutes.
Add to this
The soaked barley
1 cup frozen peas
1/4 cup sun dried tomatoes, Diced
1 tablespoon dried rosemary
2 tablespoons salt
3 tablespoons worcestershire sauce
4-5 cups chicken stock (Organic, Low Sodium recommended)
Juice from 1 lime
Turn the pot to medium heat until you see steam come from the stock.
By hand roll enough chicken to make a small to medium sized meatball, and carefully put into pot. You will do this until you've used all the chicken. Cover and cook for 1-2 hours on medium-low heat, or until carrots have softened.
Perfect Meatballs Marinara using straight up ground beef with Smitten Kitchen's delicious tomato sauce recipe. This one's not quite finished yet... the sauce still needs about 20 minutes on low to thicken.
and vermecelli. this was my first time to make meatballs from scratch and i was very happy with them. C even said they were good! Most of my homemade stuff turns out like crap.
Easy to make meatballs: Ground pork, onion, garlic, green onion, dried basil, panko, egg, milk, mixed spices & Parmesan cheese.. oven temperature 400f bake 15mins broil 10 mins
