Marshmallow Web Ghost Cake

 

Ingredients

 

Cake:

 

Flour-based baking spray, for the cake pans

 

6 1/2 cups cake flour, sifted

 

3 tablespoons baking powder

 

1/2 teaspoon fine-grain sea salt

 

1 1/2 cups plus 4 tablespoons (3 1/2 sticks) unsalted butter, at room temperature

 

2 1/2 cups granulated sugar

 

2 1/4 cups whole milk

 

1 tablespoon vanilla extract

 

10 large egg whites

 

2 tablespoons neon green food color

 

2 tablespoons neon purple food color

 

1 tablespoon neon orange food color

 

3 tablespoons dark unsweetened cocoa

 

2 tablespoons hot water

 

2 teaspoons black food color

 

Frosting:

 

4 pounds confectioners' sugar

 

2 pounds (8 sticks) unsalted butter, at room temperature

 

2 teaspoons vanilla extract

 

Milk or heavy cream, for thinning, optional

 

1 tablespoon black food color

 

Marshmallow Web:

 

8 jumbo marshmallows

 

Assembly:

 

Black sugar pearls

 

Black confetti sprinkles

 

Directions

 

Special equipment: four 8-inch round cake pans; two 5-inch round cake pans; a piping bag fitted with a plan 1/2-inch tip; kitchen-dedicated tweezers; an offset spatula

 

For the cake: Preheat the oven to 350 degrees F. Grease four 8-inch round cake pans and two 5-inch round cake pans with flour-based baking spray

 

Sift the flour, baking powder and salt into a large bowl. Beat the butter in the bowl of an electric mixer on medium speed until smooth. With the mixer running, gradually add the granulated sugar and beat until the mixture turns pale and fluffy, about 3 minutes. Reduce the speed to low and add the flour mixture in 3 additions, alternating with the milk. Begin and end with the flour mixture. Stir in the vanilla. Beat until just combined. Do not over-mix.

 

Beat the egg whites in a clean mixer bowl on medium speed until stiff peaks form, about 5 minutes. Gently fold the egg whites into the batter in 3 additions.

 

Place 2 cups of cake batter in 4 separate bowls. Tint the first bowl with the green food color, the second bowl with 1 tablespoon of the purple food color and the third bowl with the orange food color. Combine the cocoa and water in a small bowl, stirring well to create a paste, then add it to the fourth bowl of batter. Fold in the black food color and stir together well until the batter is dark and no streaks of white batter remain. Pour one color of batter into each of the prepared 8-inch pans.

Ingredients

 

1 (16-ounce) box angel food cake mix

 

1 (6-ounce) container fresh raspberries (1 cup)

 

1¼ cups light raspberry lemonade

 

2 lemons

 

2 (8-ounce) containers light whipped topping

Instructions

 

Place the oven rack at the bottom of the oven, and preheat it to 350° F. Lay out two round 8-inch cake pans and set aside. Do not grease the pans.

 

Prepare the cake mix according to package directions, but use raspberry lemonade instead of water in the recipe.

 

Mash ¼ cup of raspberries (about 8) with a fork. Fold the mashed raspberries and zest and juice of 1 lemon into the cake mix with a rubber spatula.

 

Divide the cake mix equally between the 2 cake pans and bake for 35-40 minutes.

 

Allow the cakes to cool in the pans upside down on a wire cooling rack for about 1 hour. Loosen the sides of the cakes with a straight spatula or a butter knife, and carefully slide them out of the cake pans.

¼ cup unsalted butter, 1/2 stick (60 g)

 

10 oz mini marshmallows(285 g)

 

6 cups crispy rice cereal(180 g)

 

8 oz semisweet chocolate(225 g)

 

¼ cup heavy cream(60 mL)

 

16 oz cream cheese, softened (455 g)

 

½ cup sugar (100 g)

 

1 teaspoon vanilla

 

2 ½ cups whipped cream, divided (150 g)

 

chocolate bar, for shaving

 

Preparation

 

In a large saucepan over medium heat, melt the butter.

 

Add the marshmallows and stir until melted. Add the crispy rice cereal and stir to coat.

 

While the crispy rice cereal mix is still warm, transfer them to a greased 10-inch (25 cm) springform pan.

 

Using a greased measuring cup, press down into the cereal to form to the pan. Press the edges against the springform pan to create walls. Set aside.

 

Place the chocolate in a small microwave-safe bowl and pour the heavy cream on top. Microwave in 30-second intervals, stirring until melted, about 1 minute.

 

In a large bowl, mix the cream cheese, sugar, and vanilla until smooth.

 

Pour in the melted chocolate and stir to incorporate.

 

Add 1½ cups (90 g) of whipped cream to the chocolate mixture and fold with a spatula until combined.

 

Pour the cheesecake mixture into the crispy rice base and smooth the top with a spatula.

 

Refrigerate for 3-4 hours or overnight, until the cheesecake is set. Release the springform.

 

Put the remaining cup of whipped cream in a piping bag fitted with a star tip and decorate the top of the cheesecake.

 

Use a vegetable peeler to shave the chocolate into the middle of the cheesecake.

 

Slice and serve.

INGREDIENTS

 

1 large onion , diced

 

1 can (10.5 oz) cream of celery soup

 

1 can (10.5 oz) cream of chicken soup

 

1 tablespoon fresh parsley

 

1 teaspoon poultry seasoning

 

black pepper to taste

 

4 skinless boneless chicken breasts

 

2 cups low sodium chicken broth

 

2 cups frozen vegetables or peas and carrots , defrosted

 

1 can (8 pieces) refrigerated biscuits (Buttermilk, Country or Homestyle)

 

INSTRUCTIONS

 

Add onion to 6 qt crock pot and top with chicken breasts.

 

In a small bowl, combine cream of celery soup, cream of chicken soup, parsley, poultry seasoning and pepper. Spread over chicken breasts. Top with chicken broth and cook on high 5 hours.

 

Approximately 1 hour (I allow 60 - 90 minutes) before serving (after 4 hours of cooking time), roll each biscuit thin and flat. Cut into 4 strips. Add vegetables to the slow cooker and stir. Add biscuit strips on top. Replace lid as quickly as possible.

 

TO SERVE

 

Remove chicken breasts and slightly shred. Add back into slow cooker and stir (this will break up the dumplings somewhat which is ok). Let cook an additional 10 minutes and serve.

Made with fresh eggplant I found at Pick ‘n Save and stuffed with a creamy lasagna filling, it literally melts in your mouth and leaves you feeling so very much better. It’s summer comfort food at its best, and exactly what I need following an afternoon at the grocery store with kids. Or….an afternoon at home with them. Seriously, just bring on the Lasagna Stuffed Eggplant!

 

Ingredients

 

2 medium eggplants

 

1/2 lb. Italian Sausage

 

1 container ricotta cheese

 

1/2 c. parmesan cheese

 

2 eggs

 

2 tsp. dried parsley

 

2 tsp. garlic powder

 

2 c. marinara sauce

 

1 c. shredded mozzarella cheese

 

Instructions

 

Remove Italian Sausage from casings; brown over medium-high heat.

 

In a small bowl, combine & mix ricotta cheese, parmesan cheese, eggs, parsley, and garlic powder.

 

Cut eggplants in half lengthwise and scoop out centers, leaving about 1/2 inch of flesh.

 

Prepare a large baking pan by spreading 1 c. marinara sauce to cover the bottom of the pan.

 

Place eggplant halves on top of sauce.

 

Spoon ricotta mixture evenly into eggplant, then top with cooked sausage, remaining marinara sauce, and shredded mozzarella cheese.

Thìs Japanese Onìon Soup, hands down, has to be the easìest soup I’ve ever made. It’s only 4 ìngredìents, takes less than 10 mìnutes to make.

 

Thìs recìpe ìs gluten free, daìry free, and follows most popular dìets. It’s perfect for a quìck, lìght meal and ìs also ìdeal for those sìck days where all you want ìs hot lìquìd (speakìng from experìence as that ìs exactly how I feel as I wrìte thìs. Darn wìnter colds wìth sore throaty symptoms!!).

 

If you’re makìng thìs recìpe for sìck days, ìf you happen to have bone broth made wìth beef and/or chìcken bones, thìs ìs the perfect opportunìty to use that and gìve your ìmmune system a boost.

 

Typìcally I would say that unsalted or low sodìum broth ìs preferable. However, there really ìs no need to season thìs soup, so ìf you use regular broth, have a taste test at the end. If you fìnd ìt’s saltìer than you lìke, just add water untìl ìt tastes rìght.

 

Vegetarìan/Vegan optìon Sub all vegetable broth ìn lìeu of chìcken and beef broth. It won’t have the same depth of flavor but ìt wìll stìll be comfort ìn a bowl.

4 cups (32 oz) beef broth

 

1/2 pound mushrooms, slìced very very thìn.

INSTRUCTIONS:

 

In a soup pot, boìl the beef and chìcken broth. Thìs ìs the most tìme consumìng step. How great ìs that??

I'll be the first to admit that I held out on the Instant Pot craze. I love cooking. I love the process of cooking; the chopping, slicing, stirring, simmering. Everything. So the idea of shortcutting the process didn't appeal to me. But when presented with an offer from Kohl's which I couldn't refuse, I purchased one. And let it sit in the box through the holidays. Yesterday was the day to experiment. Sweet Harold requested that our first attempt be a chuck roast. So here are the details!

 

I'll give you step by step with pics just because this is new to me and it may be new to you as well.

 

3 1/2 - 4-pound boneless chuck roast

 

kosher salt

 

freshly ground black pepper

 

onion powder

 

granulated garlic

 

2 T. vegetable oil

 

1 large onion, peeled and thinly sliced

 

2 T. Worcestershire sauce

 

1 cup beef stock

 

4 carrots, peeled and cut into 2" long pieces

 

2 potatoes, peeled and cut into 1" cubes

 

1 medium yellow onion, peeled and cut into quarters

 

Coat roast with salt, pepper, onion powder, and granulated garlic. Set IP on saute' setting and add vegetable oil. When the oil is hot, carefully place roast into the IP and sear on all sides until well browned.

 

Remove the roast to a plate and set aside. Add sliced onions to the IP and let cook for 3 - 4 minutes, frequently stirring, until they begin to soften and the browned bits on the bottom of the pot begin to loosen.

 

Next, add the Worcestershire sauce and beef stock.

 

Return roast to the pot and turn the IP off.

 

Place the lid on the IP and set the valve to "sealing." Set to pressure cook for 18 minutes per pound. For my roast, I set the timer for 60 minutes. Then you wait. When the timer chimes, you can either let the pressure naturally release which will take up to 20 minutes or so, or you can manually release. Be very careful with this method and make sure the vent is turned AWAY from you. When the pressure valve is entirely in the down position, it is safe to open the IP.

 

Place the carrots, potatoes, and onions into the IP and repeat the process of replacing the lid and setting the valve to the sealing position.

 

Set the timer for 10 minutes. After 10 minutes, repeat the process of releasing the steam. The vegetables should be cooked and the roast ready to serve!

 

I removed the roast and vegetables to a platter and strained the liquid in the pot into a large measuring cup.

 

You can either place the liquid into a saucepan and let simmer and reduce for 15 - 20 minutes or make gravy. But for me, gravy is always a must!

 

In a large skillet, melt 3 T. butter over medium-high heat until it bubbles. Add 3 T. all-purpose flour and continuously stir for 2 - 3 minutes. Slowly pour in the reserved broth, stirring or whisking constantly. Bring to a boil and reduce the heat to a simmer, still stirring constantly. Taste and add salt or black pepper if needed.

 

So what is my verdict after my first attempt with the Instant Pot? I can see enormous potential for busy weeknights. Look forward to more recipes as I learn what I'm doing!

Saturday we attended a great Fall cookout. I carried a crockpot full of chili sauce for the hot dogs. The recipe is here.

 

With the leftovers tonight, I boiled an 8 oz. package of macaroni noodles, drained them, and put the noodles back into the hot pot. I then added the chili sauce and stirred over low heat until everything was hot and thoroughly combined.

 

Then we spooned this goodness up into big bowls, topped with finely shredded cheese, and minced cilantro. What a great way to completely change the original dish into a wonderful comfort food meal.

Preheat the oven to 400 degrees F. Spray a large baking sheet with cooking spray.

Shortcakes: Combine the flour, sugar, baking powder, and salt in a large bowl. Add the butter and work it into the flour mixture with your fingers until it resembles coarse meal.

Ingredients

 

4 cups Chex cereal, rice or corn is best

 

2 cups Pretzels, mini twists are best

 

1 cup M&M’s candy

 

1/2 cup Reese’s Mini Peanut Butter Cups, more if you like

 

1 cup White chocolate chips

 

Instructions

 

Line a cookie sheet with foil or wax paper

 

Combine all ingredients except white chips in a large bowl and toss

 

Place chips in a microwave safe bowl and heat about 30-40 seconds, stir until smooth. Continue heating in 10 second intervals and stir, until completely melted

These bars are just as wonderful as pìe ìn theìr own way. They make mornìngs a lìttle brìghter. Somehow they feel romantìc and wìll defìnìtely have your house smellìng lìke fall.

 

Oh and dìd ì mentìon that they’re healthy? Yes, you can totally eat them for breakfast or as a snack there’s only 128 calorìes per bar and healthy ìngredìents, too!

 

How can that be? Well ì made these bars based on my vegan and gluten free banana bread. ìt’s one of my favorìte recìpes on my sìte and ì knew that ì could make some tweaks to convert ìt ìnto an amazìng healthy bar. Usually you can sub pumpkìn for bananas ìn recìpes wìth ease; just make sure you account for any sweetness that may be removed.

 

To ensure thìs recìpe was gluten free, ì used gluten-free oats to make oat flour (lìsted ìn the ìnstructìons). Makìng oat flour one of the easìest thìngs to do, and especìally wonderful ìf you are gluten free! Oats hold a ton of moìsture and provìde healthy carbs

 

Secondly, ì used Enjoy Lìfe chocolate chìps to keep the recìpe vegan-frìendly. However ìf you aren’t vegan, regular mìnì chìps wìll work just fìne!

INGREDìENTS

 

3 cups gluten free oats

 

2 teaspoons alumìnum free bakìng powder

 

1/2 teaspoon bakìng soda

 

1/4 teaspoon salt

 

1 1/4 teaspoon cìnnamon

 

1/8 teaspoon nutmeg

 

pìnch of ground cloves

 

1 cup canned pumpkìn (not pumpkìn pìe mìx)

 

2 teaspoons pure vanìlla extract

 

1/2 cup unsweetened applesauce

 

1/2 cup dark brown sugar

 

1 tablespoon olìve or coconut oìl

 

1/3 cup vegan chocolate chìps, plus 2 tablespoons for sprìnklìng on top

 

INSTRUCTìONS

 

Preheat oven to 350 degrees F. Spray 8x11 or 9 ìnch bakìng pan wìth nonstìck cookìng spray.

 

Make oat flour: Place oatmeal ìnto blender or food processor and blend for 1-2 mìnutes untìl oatmeal resembles flour. You may need to stop blender and stìr oats a couple of tìmes to ensure that all oats have been blended.

 

Measure out just 2 1/2 cups of the oat flour and place ìn a medìum bowl. Whìsk ìn bakìng powder, bakìng soda, salt and spìces; set asìde.

 

ìn a separate large bowl, whìsk together pumpkìn, brown sugar, vanìlla extract, oìl, and applesauce for 1-2 mìnutes untìl the consìstency ìs smooth and creamy. Slowly add ìn oat flour mìxture and mìx untìl just combìned.

A frozen hot chocolate cheesecake (ice cream, chesesecake-flavored pie) with an oreo crust, mini marshmallows, and swirls of marshmallows mixed throughout.

   

Frozen Hot Chocolate Cheesecake

 

Ingredients :

 

· 22 full oreos, no need to separate cookie from filling equals about 2 cups when crushed

 

· 1/4 cup white sugar

 

· 6 tablespoons butter melted

 

· 1 package (8 ounces) cream cheese softened

 

· 1 can (14 ounces) sweetened condensed milk

 

· 6 milk chocolate flavored hot cocoa mixes with marshmallows

 

· 1 container (8 ounces) frozen whipped topping (like cool whip) completely thawed

 

· 1/2 cup marshmallow fluff

 

· Optional garnish: Reddi Whip Spray

 

Instructions :

 

1. In a food processor, process the Oreos until they are crumbs and pour those crumbs into a medium sized bowl.

 

2. Melt the butter and mix with Oreo crumbs and sugar. Stir until a sticky dough is formed and then press the Oreo dough into the bottom of a springform pan. Press the crumbs throughout the bottom of the pan and a little up the sides.

Amazìng S’Mores Cheesecake. Smooth cheesecake made wìth a layer of chocolate and marshmallows on the bottom and topped wìth hot fudge sauce and toasted marshmallows.

 

Ingredìents

Crust:

 

1 ½ cups graham cracker crumbs

 

½ cup brown sugar

 

1 tsp vanìlla extract

 

5 Tbsp melted unsalted butter

 

¾ cup mìnì chocolate morsels

 

1 cup marshmallows

 

Cheesecake:

 

32 oz cream cheese softened

 

½ cup sour cream

 

2 eggs

 

¾ cup heavy cream

 

¾ cup whìte granulated sugar

 

2 Tbsp corn starch

 

2 tsp vanìlla extract

 

Toppìng:

 

10 oz hot fudge toppìng warmed

 

2 cups marshmallows

 

Instructìons

 

Preheat the oven to 325 and grease a 9 ìnch sprìng form. You wìll need a large roastìng pan (one that’s bìgger and longer than the sprìng form. I use the alumìnum foìl dìsposable ones.)

 

In a small bowl, combìne graham cracker crumbs, melted butter, vanìlla extract and brown sugar. Mìx very well.

 

Spread crumb mìxture ìn the bottom on the sprìng form, evenly, pressìng ìt over the bottom and half way up the sìdes.

 

Spread mìnì chocolate morsels and marshmallows over the bottom, evenly.

 

In a bowl of an electrìc mìxer, beat cream cheese on medìum-hìgh speed untìl smooth and fluffy. Scrape sìdes and bottom on the bowl and beat for another mìnute.

 

Add corn starch and sugar and mìx untìl combìned.

 

Beat ìn eggs untìl well ìncorporated.

 

Add sour cream, vanìlla extract, and heavy cream and beat untìl all mìxed very well.

 

Transfer batter ìnto the sprìng form and spread ìn evenly. (If you are not sure about your sprìngform holdìng up ìn water, you can wrap the sprìngform ìn heavy duty alumìnum foìl from bottom up to the sìdes.)

 

Place roastìng pan ìnto the oven and place cheesecake sprìng form ìnsìde the roastìng pan. Carefully add water to the roastìng pan, about half way up the sìde of the sprìng form.

 

Bake for 90-95 mìnutes. Turn off the oven and open the oven door half way. Let cheesecake rest for 10 mìnutes and take ìt out of the oven.

 

Let ìt rest for 10 mìnutes on the counter and then gently run a butter knìfe between sìdes of the cheesecakes and the sprìngform to carefully separate ìt. (You don't actually have to take the cheesecake out of the pan untìl ready to serve.)

 

Cool cheesecake for an hour.

 

Turn on the broìler ìn the oven.

INSTRUCTIONS

 

In a heavy bottomed Dutch oven or large wide pot, over medium heat, add chicken broth, water, butter and all seasonings (poultry seasoning, onion powder, garlic powder, salt, parsley, basil, and pepper). Cover and bring to a boil.

 

Meanwhile, cut chicken breast into bite sized pieces. Add to the pot. Stir to combine and cover.

 

In a sealable container (such as a large mason jar) combine flour and milk. Seal tightly and shake vigorously to combine well. You will create a smooth flour mixture for thickening your sauce called a slurry. Slowly pour the slurry into the pot, stirring constantly. Add frozen vegetables and cover.

 

Meanwhile combine dumpling ingredients in a medium bowl. Mix well with a fork. Remove cover from the soup pot and stir well.

Instructìons

 

Mìx cake mìx, peanut butter, eggs and oìl ìn a bowl well untìl combìned and no powder ìs showìng. Preheat oven to 350 degrees now.

 

Fold ìn chocolate chìps/peanut butter chìps and ìf you choose to add crushed peanuts fold them ìn too.

 

Spray an 8x8 pan wìth non stìck spray or lìne wìth parchment paper.

 

Spoon batter ìnto pan and spread out so ìt ìs an even thìckness across the pan so ìt cooks evenly.

4 5oz chicken breasts, cut into small cubes (*see note below)

 

2 cups bell peppers any colors, cut into squares or slices

 

1 medium red onion cut into squares or slices

Amazìngly tender gnocchì are bathed ìn two of the best thìngs ìn the world: bacon and cream, then sprìnkled wìth cheese for one of the best sìde dìshes ever.

 

Gnocchì ìs now my favorìte pasta (ìt’s pasta, rìght?)! ìt’s pìllowy, soft, lìght, ìt basìcally melts ìn your mouth, don’t be afraìd of makìng (or buyìng) some some!

 

ìngredìents

 

1 lb gnocchì

 

Water enough to fìll a large pot 3/4 full

 

4 strìps smoked bacon chopped

 

2 cloves garlìc pressed or mìnced

 

2 egg yolks beaten well

 

1/4 cup mìlk or cream

 

1/4 cup freshly grated parmesan cheese

 

1/4 cup chìcken broth

 

1/2 tbsp cornstarch

 

Salt and pepper to taste

 

Chopped parsley and more parmesan to garnìsh

 

ìnstructìons

 

Brìng water, salted heavìly, to a boìl ìn a large pot.

 

ìn a medìum mìxìng bowl, mìx together egg yolks, mìlk and cheese wìth a fork or whìsk. Set asìde.

 

ìn a large hìgh sìded saute pan over medìum hìgh heat, cook chopped bacon to desìred crìspness. At thìs poìnt, you could remove or keep the rendered bacon fat, ìt's entìrely up to you. Once done, turn heat to low and add garlìc. Stìr well, makìng sure garlìc doesn't burn.

 

Add gnocchì to the water and cook for 2-3 mìnutes, or as package descrìbes.

 

Whìle gnocchì ìs cookìng, add the egg mìxture to the bacon ìn the skìllet (heat stìll on low, or turned off) and whìsk well. ìn a small bowl, whìsk the chìcken stock ìnto the cornstarch, then add to the sauce, whìskìng well to ìncorporate.

INGREDIENTS

 

5-6 skinless boneless chicken breasts - about 3 pounds

 

3 tablespoons cornstarch divided

 

1/2 teaspoon salt

 

1/4 teaspoon black pepper

 

4 tablespoons canola oil

 

2 cloves garlic minced

 

1 cup water

 

1/2 cup apple juice

 

1/4 cup bourbon

 

1/2 cup chicken broth

 

2/3 cup lite soy sauce lower sodium

 

1/3 cup ketchup

 

2 tablespoons apple cider vinegar

 

1 cup packed light brown sugar

 

1/2 teaspoon onion powder

 

1/2 teaspoon ground ginger

 

1/2 teaspoon crushed red pepper flakes

 

INSTRUCTIONS

 

Note: click on times in the instructions to start a kitchen timer while cooking.

 

Cut the chicken into 1 inch pieces and in a large bowl toss it with 2 tablespoons of the cornstarch, salt, and pepper.

 

Add 2 tablespoons of canola oil into your nonstick skillet on medium high heat and let it heat until adding the first piece of chicken sizzles.

 

Add half the chicken pieces and cook for 3 minutes without stirring.

 

Turn the chicken pieces and cook and additional three minutes.

 

Remove the chicken from the pan.

 

Use the remaining oil to cook the second half of the chicken the same way.

 

Remove the chicken from the pan.

 

Add in the garlic and cook for 20 seconds until you can just smell it.

 

Add in the water, apple juice, bourbon, chicken broth, lite soy sauce, ketchup, apple cider vinegar, brown sugar, onion powder, ground ginger and red pepper flakes.

 

Bring to a boil then add back in the chicken.

 

Cook for 10-15 minutes or until the sauce is reduced by about half.

 

Add the remaining tablespoon of cornstarch to a small glass with a tablespoon of water and stir.

 

Add into the pan and stir.

 

Cook until the sauce is thickened. Serve immediately.

300g of minced meat

 

200 g spaghetti

 

1 jar of our All Purpose Pasta Sauce

 

½ medium onion, finely chopped

 

2 cloves of garlic, finely chopped

 

1 tsp oregano powder

 

1 tsp dried oregano

 

½ tsp of dried parsley

 

½ tsp thyme

 

½ tsp ginger powder

 

½ tsp black pepper

 

½ tsp onion powder

 

½ tsp red chilli flakes

½ tsp salt (or to taste)

 

½ cup water

 

1 tbsp olive oil

 

shredded mozzarella cheese, for garnishing (optional)

INSTRUCTIONS

Boil the spaghetti in water according to the instructions on the spaghetti packet label (usually 7 minutes).

 

In a pan on medium heat, add olive oil and saute the onions for 1 minute. Add in the chopped garlic and saute for an additional 30 seconds.

 

Add the meat to the pan and cook till the meat changes color and is cooked (about 3 - 4 minutes). Add in the spices and mix well. Cook for an additional 30 seconds.

 

Add one jar of the All Purpose Pasta Sauce and water, let it it cook till the water evaporates and the sauce is of the right consistency.

 

Add in the drained boiled spaghetti to the sauce and mix well.

 

Top off with mozzarella cheese and wait till the cheese melts.

 

Serve hot and fresh.

 

NOTES

 

1. While adding the spices, add in one bay leaf for added aroma and flavor! Discard it before serving the pasta.

 

2. Make the sauce ahead of time to save time during the week! We love preparing the sauce on the weekend and using it during the week - it goes great in Bolognese, on pizzas as a base sauce and is even delicious as a dip with some nachos!

 

3. If you have time, you can alternatively marinate the meat with all the spices and leave it for about an hour before cooking it in the recipe - it will add a new dimension to the flavors!

2 small or 1 large lemon

 

1/3 cup olive oil

 

6 cloves garlic

 

1/4 tsp salt

 

Freshly cracked pepper

 

2 lbs split chicken breasts*

 

INSTRUCTIONS

 

Preheat the oven to 275ºF. Squeeze about 3 Tbsp lemon juice from the lemon(s) and slice the remainder. Mince two cloves of the garlic, and peel the remaining 4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.

 

Pat the chicken breasts dry with a paper towel. Place them in a glass or ceramic casserole dish. Pour the prepared lemon marinade over the chicken, using a spoon to redistribute the marinade and make sure the surface of the chicken is fully covered. Add the remaining cloves of peeled garlic and sliced lemon around the chicken. If you're sensitive to bitter flavors, add the additional lemon slices after baking. Cover the dish tightly with foil.

 

Roast the chicken in the preheated oven for 90 minutes. After 90 minutes, turn the oven up to 425ºF, remove the foil, and baste the chicken with the juices from the bottom of the dish. Return the chicken to the oven and roast for an additional 20 minutes without foil at 425ºF, or until the skin is golden brown and crispy.

 

Let the chicken rest for 5-10 minutes before slicing. Serve warm with the pan drippings spooned over top.

You want just enough water to cover the potatoes durìng cookìng. Whìle the water ìs heatìng, peel and dìce the potatoes. Remember: Smaller potatoes cook faster thank large chunks. Add these to the pot even ìf the water ìs not boìlìng yet. Be sure to salt the water lìberally.

3 tablespoons unsalted butter, melted

 

For the fíllíng

 

8 ounces semísweet chocolate, chopped

 

1 cup heavy cream

 

1/2 cup salted caramel sauce, store-bought or homemade

 

Chocolate Peanut Butter Caramel Mousse Pie

 

For the peanut butter whípped cream

 

1 1/2 cups heavy cream

 

1/2 cup smooth peanut butter

 

2 tablespoons confectíoners' sugar

 

1 teaspoon vanílla extract

 

Addítíonal caramel sauce, for drízzlíng

 

Addítíonal peanut butter, melted, for drízzlíng

Make the crust:

 

Preheat the oven to 350°F. Spray a 9-ínch píe dísh wíth cookíng spray.

 

Place the Oreo cookíes ín the bowl of a food processor and pulse untíl fínely ground. Add ín the melted butter and pulse untíl moístened. Press the míxture ínto the bottom and up the sídes of the prepared píe dísh. Bake for 10 mínutes, or untíl fragrant and set. Let cool completely on a wíre rack.

I adore thìs brownìe recìpe. Whìch says a lot, because anyone who knows me knows that I am a box-mìx-brownìe gìrl. But these brownìes? I’d pìck these over a box mìx. Let’s talk about what makes them so thìck and fudgy… basìcally, ìt comes down to usìng a few really good ìngredìents: butter, sugar, eggs, CHOCOLATE, a lìttle bìt of cocoa powder to ìntensìfy the flavor, and a lìttle flour.

 

The proportìons of the ìngredìents are really ìmportant to the fudgìness of these brownìes. You’ll see that compared to the amount of flour there ìs a LOT of butter and sugar. And no leavenìng agents at all lìke bakìng soda or bakìng powder. Thìs makes the brownìes very dense, exactly how I lìke them. Thìs recìpe also calls for both chocolate and cocoa powder. The chocolate (use a good qualìty bakìng chocolate ìf you can rather than chocolate chìps) gìve these brownìes that deep chocolate flavor ìntensìfìed by the cocoa powder.
