Cucumber Falls at Ohiopyle State Park, PA

A lot of people have been giving me cucumbers from their gardens lately so today I decided to make something with them! Cucumbers, olive oil, balsamic vinegar, sea salt, and basil. I shot this in my kitchen with all natural light using me new canon 100mm 2.8 macro USM

Great cukes again this summer, but it's not even mid july and the 'cumbers are starting to brown. We probably get about two more weeks before the look mutant.

Pickled Cucumber

This was unrealistic: nori, some other type of seaweed, sea beans and pickled cucumbers created a sensation like I have not had before... For a brief moment it was the best thing I have ever tasted.

Here's a pair of the cucumbers from the huge cucumber plant in the greenhouse. These things are growing at an amazing pace. I think that I'll have to start harvesting them pretty soon.

Put a condom on your cucumber or else your cucumber will get aids and be unhappy. The message is pretty clear, I wonder if it has a metaphorical meaning...

There are about 5 cucumber plants scattered around my garden. As always I sowed more than I needed.

Ingredients

 

5 or 6 small pickling cucumbers (you can use 2 or 3 English cucumbers if that’s all you can get your hands on)

half of a medium-sized Vidalia onion

1/2 cup white vinegar

1/2 cup water

2 teaspoons sugar

1 teaspoon salt

1 garlic clove, finely minced

 

Instructions

 

Peel cucumbers and slice to your liking. Peel and slice onion. Combine in a large bowl.

Combine vinegar, water, sugar, salt, and garlic and pour over cucumbers and onions.

Allow to sit at least an hour before serving.

Ohiopyle State Park in Pennsylvania. Cucumber Falls is a 30-foot (9.1 m) bridal veil waterfall on Cucumber Run, a small creek which flows into the Youghiogheny River. It can be reached from Meadow Run Trail.

We're only watering it, now. It gets none of the celebratory fawning of the past.

Prickly and dirty, but I bet they're gonna be gooood.

There really is no better way to prep yourself for visiting another country than to eat (and in this case prepare) food that is found there. I stopped by the local grocery (Hugo's) to pick up a few staple items, and in the fresh bread area I spotted a loaf of "English Muffin Bread." Figuring the name was self explanatory, I decided to grab a few more items and make a classic English Cucumber Sandwich.

 

I have to say, it was pretty darn delicious! It was light and airy, very refreshing, probably not the best choice of food for today's blustery weather, though! I could definitely see myself making a few of these for lunch during the warmer Summer months.

All of those cucumbers I planted about six weeks ago have started producing. The Monticello inspired teepees have been working well for supporting the vines, they look really lovely now that they're lush with cucumber and pole bean vines. I have had to train the cucumber vines to grow up the supports. I'm trying to think of a way to improve on this design next year. Last week I started harvesting cucumbers from all three varieties that I'm growing this season. I planted 12 vines of each in hopes of having a large flush of cucumbers for all those pickling recipes that call for pounds and pounds of cucumbers.
