Towns Delight was established in 1974 at Tanza, Cavite by Mrs. Cecilia del Rosario-Pacumio, a Home Economics teacher.

It has been a wedding caterer for 20 years now.

Its president and general manager Mr. Andrew Pacumio is a founding director of the Food Caterers Association of the Philippines. He was the associations vice president in 2006.

The company maintains 50 regular employees and around 300 part-time employees.

Towns Delight also maintains WeddingInTheSky.com, Cavites first wedding website/portal that features essential info about wedding planning, products, and services.

The company likewise owns and operates The Republic of Cavite Restaurant located at Trece Martirez, Cavite. The Republic has function halls and outdoor venues perfect for any occasion.

Other venues owned and operated by Towns Delight are the Gardenia Cecilia Pavilion located in Naic, Cavite (seating capacity of 500) and Hardin de San Antonio at Tanza, Cavite that can accommodate 250 guests. For a consultant, Towns Delight has Ma. Sunnel Pacumio, a topnotch chef at Four Seasons Hotel in Ireland. She specialized in Culinary Arts at premier schools abroad.

Also serving as a mentor of Towns Delight is Ma. Peaches Pacumio, a masters degree holder, who is about to finish Hospitality Management at a prestigious university in Canada.

Towns was the official caterer of the Bong-Lani Revilla centennial wedding held on March 25, 1998 at Imus, Cavite. It prepared special Caviteño dishes for the 2000 VIPs of the Revillas.

Towns Delight has pioneered holding culinary festivals and bridal fairs in Cavite.

It likewise spearheaded a food show dubbed The Taste of Cavite held at SM Dasmariñas two years ago.

Mohamed Sayed (46) makes crispy Pappadam in Annarkali market in Lahore. He sits on the ground and roast Pappadam in hot charcoal. He sells a roasted crispy Pappadam for Pakistani Rs.1/=. He has seven children to look after.

 

"I was prevented from going to school due to poverty which prevailed in my family. I earn Pakistan Rupees 300/= to Pakistan Rupees 500/= daily, which is not enough to look after my whole family. I skip my meals and break my rest to work long hours to earn more money to educate my children, because I do not want to see my children suffering like myself without education" said Mohamed Sayed, while roasting Pappadam in the night during winter in congested Annarkali market which is situated in the centre of Lahore.

Half pound 100% Angus beef, hand formed and cooked medium rare with fried jalapeños, pepper jack cream cheese, chipotle mayonnaise, Baja sauce, red onions, tomato and lettuce. Served with crispy-thin fries.

My blood glucose was 104 mg/dl before eating and 150 mg/dl two hours later.

Crispy Yellowfin Tuna

Caramelized cauliflower, endive and charred onion consomme. ($18)

 

Notes: I had a difficult time imagining how tuna could be done well in a "crispy" form. This was it. The 2 oz. cube of yellowfin had been crusted with panko mix of herbs and spices - coriander being one - that imparted a nice musky fragrance that I really enjoyed.

 

The charred cauliflower, having a grilled smokiness, made an excellent compliment to the flavors in the tuna crust.

 

The bed of sprouts and charred onion consomme, both very delicate flavors, provided a nice fresh and bright counterpoint to the flavor-forward tuna.

We decided to make these when were were down in swansea, me and jas own at cooking!

We also make an amazing spag bowl! :)

Deep-fried pork, native to the northern parts of the Philippines, especially Ilocos. Best served with steamed rice and Pinakbet.

You can probably tell I am a big fan of backlighting. The setting sun created crisp edges to this fern.
