[Abstract]
The craft of the Chef is a tiring job that gives moments of dream and extreme sensory and aesthetic pleasure to people. What's behind the evanescent scenes and the classic glossy food photos of dishes on “Michelin” restaurants tables, however, is often not enough known by insiders nor even by the clients of a restaurant in terms of craftsmanship and know-how.
Fascinated from mastery of these taste explorers and from their ability to compose dishes obtained after a long and hard research, I entered in their kitchens on tiptoe. The appearance of the realization of the dishes adds a component of perceptual enjoyment of the creativity of the Chef and allows the viewer to "interact" with the photographs in terms of empathy with the process of implementation of the dishes, as it has been for me that, discreetly, approached the reportage project.

Lo Chef Enrico Bartolini, classe 1979, nativo di Pescia (PT), osannato dai critici gastronomici come uno tra i giovani più talentuosi d’Italia, ha ottenuto a soli 29 anni la sua prima Stella Michelin e a 33 la seconda, riconoscimenti che, con l’ottenimento di una stella Michelin anche a Bergamo e una a Castiglione della Pescaia dopo pochi mesi dall’apertura dei due locali, lo hanno consacrato Chef di livello internazionale.

Daniele Crespi (Busto Arsizio, 1598 - Milan, 19 July 1630) - Last Supper (1629-30) - Oil on canvas 335 × 220 cm - Pinacoteca di Brera, Milan
Fu eseguita per la chiesa benedettina di Brugora, in Brianza, soppressa nel 1805: a quella data divenne proprietà dell’Accademia di Brera, che la trasferì alla Pinacoteca nel 1809. L’artista fu certamente influenzato, soprattutto per la scelta del punto di vista dall’alto, dal Cenacolo dipinto da Gaudenzio Ferrari per la chiesa della Passione a Milano, anche se si attenne al modello eseguito da Leonardo in Santa Maria delle Grazie per i raggruppamenti delle teste degli apostoli e per la resa dell’animata vitalità dei protagonisti. L’opera è assegnata alla tarda maturità di Crespi.
It was carried out for the Benedictine church of Brugora, in Brianza, suppressed in 1805: on that date it became property of the Accademia di Brera, which transferred it to the Pinacoteca in 1809. The artist was certainly influenced, especially for the choice of the point of view from above, from the Last Supper painted by Gaudenzio Ferrari for the church of the Passion in Milan, even if he followed the model made by Leonardo in Santa Maria delle Grazie for the groupings of the heads of the apostles and for the rendering of the animated vitality of the protagonists. The work is assigned to Crespi's late maturity.
