Duck, Potato, Kale sprouts
G'day food lovers
I was scrounging in the freezer earlier and discovered a packet of potato mash. Rather than waste it because of my low carb living, I thought I should eat it tonight with some duck breast and kale sprouts.
I cooked the duck breast for 2 hours at 76 °C (169 °F). I seared it in a hot frypan with some butter.
The potato mash is cooked using microwave radiation for 2 minutes.
The kale sprouts are cooked for 15 minutes at 150 °C (302 °F).
It's Father's Day here in Australia and the first day of Spring. Happy Father's Day to Australian dads.

I've been coughing all day. I was asked out tonight but I'd be an unsightly disgusting dinner guest expectorating sticky mucopurulent phlegm into a handkerchief.

I added some finely sliced red cabbage and sugarloaf cabbage to a saucepan with some water and laksa paste and brought it to a boil. I simmered it for about ten minutes and then added some crushed ginger and lime juice and stirred it through.
I took leftover sliced brisket and raw prawns and added it to the simmering cabbage and laksa flavours and stirred through the reef and beef. Once the prawns had changed colour I added in a small tin of coconut cream and stirred it through.
Once everything had cooked through, I turned off the heat and added the coriander roots and stems plus the spring onion whites and greens.
I ladled the soup into a bowl and garnished it with coriander leaves and a wedge of lime.
My lips are still tingling and I can breathe a little more easily. I feel full though.

G'day food lovers,
I seasoned the salmon with iodised salt and freshly cracked black pepper and put it into an oven bag with some almond meal and some garlic butter.
In another tray I had red and green with a little cream and cheese.
I put both trays into an oven for 15 minutes at 175 °C (350 °F).
The salmon tasted good.
I'm enjoying this fish in a bag thing.

I had a very filling lunch today. I had a Wagyu beef wrap with amazing hot chips from Urban Bean Espresso Bar.
I needed something light yet comforting for tea tonight. I had a piece of leftover MEATER™ made chicken which I cooked last night. I broke that up and set it aside.
In a frypan I sautéed some red cabbage and kale sprouts until they softened. I then added in the chicken pieces and the cherry tomatoes and put the lid on the frypan for three minutes. I added a knob of butter and a splash of cream with a teaspoon of Dijon mustard and stirred that through along with some sesame seeds and poppy seeds. I served it all in a bowl.
