I've been making my own pizzas for some time now, over a year actually. The twist, the pizzas are gluten-free, so that Erin can eat them. They taste much better than the Amy's rice crust pizza.

 

My recipe uses brown rice flour and tapioca flour along with some guar gum, gelatin, yeast, milk, and oil and apple cider vinegar. While its not a real pizza crust, it doesn't taste bad either. I've been using jarred sauce for convenience, but occasionally I'll make my own. The cheese blend varies. Here I used whole milk Mozzarella and Asiago, but if I have them, I'll also throw in some Romano, Parmesan, and even Provolone.

Toooo salty. The pickle salami combination did me in.

Back to using the Mr Bento! I'm recently gluten free so I have to take my lunch (and breakfast since I work 10 hour days) to work.

Sorry for the boring, repeat bento but I have a story to share. I turned my back on this bento this morning and when I turned back around I found kiddo re-arranging items to make more space. He said, "mom you can put something here, here's space for more", etc. His appetite has doubled this year! So I'm re-learning how to pack 'em tight, how much I can increase portions without waste and how many ingredients to have on hand.

This is an experiment to document/represent the laser cut books I have been making. They are all reference books, which used to get photocopied, but are now just plain obsolete. I have been laser cutting poetic epigrams into them. I thought that returning them to their original status as things-to-be-photocopied might have some resonance. So i scanned them. This is a worldbook - just a test. This is a tabloid(?) sized scanner (and this is the smallest book I have cut.

 

I am unsure if this works or not, and whether the hands help or hinder the idea. Hands always showed up in old photocopies of books, but here, it seems overwrought? Or does the reference carry meaning?

Use whatever herbs you have on hand to change this easy recipe up to your own liking. Or use the buns for biscuits and gravy. Man, they are good!

I'm tired of trying to make everything pretty.

 

We make these quick muffins almost every week. Leftover oatmeal with the berries cooked in. A handful of flours, baking powder, xanthan gum. An egg. Some sugar.

 

It's all by feel. Nothing written out.

 

They're great. Moist and full of whole grain goodness. and the kid gobbles them.
