I've been making my own pizzas for some time now, over a year actually. The twist, the pizzas are gluten-free, so that Erin can eat them. They taste much better than the Amy's rice crust pizza.

 

My recipe uses brown rice flour and tapioca flour along with some guar gum, gelatin, yeast, milk, and oil and apple cider vinegar. While its not a real pizza crust, it doesn't taste bad either. I've been using jarred sauce for convenience, but occasionally I'll make my own. The cheese blend varies. Here I used whole milk Mozzarella and Asiago, but if I have them, I'll also throw in some Romano, Parmesan, and even Provolone.

Toooo salty. The pickle salami combination did me in.

Back to using the Mr Bento! I'm recently gluten free so I have to take my lunch (and breakfast since I work 10 hour days) to work.

Sorry for the boring, repeat bento but I have a story to share. I turned my back on this bento this morning and when I turned back around I found kiddo re-arranging items to make more space. He said, "mom you can put something here, here's space for more", etc. His appetite has doubled this year! So I'm re-learning how to pack 'em tight, how much I can increase portions without waste and how many ingredients to have on hand.
