Leidse kaas / Leyden cheese

Like Gouda only with less fat and always with cumin seeds.

At dairy farm 'BoerenLeidseKaas Kwakernaak' they make this cheese and butter from the same batch of non-pasteurized cow milk.

This variety is matured/riped/aged for about 12 months. In this period the cheese looses a lot of water, so the relative amount of salt, fat and taste goes up.
