Campden Tablets. Potassium Sorbate

These are often used to kill natural yeasts in the apple juice as well as bacteria. While most brewer yeasts will over power natural yeasts in the must, Campden tablets or Potassium Sorbate in powder form offer a cider maker a clean slate so to speak. A clean slate allows the cider maker to take their brew in many directions. Interestingly enough traditional French cider makers use only the yeast from pressed apples and add no sugar.
