smashed chickpea salad
wow - so ridiculously easy and so much fresh flavor - how come i never thought of this!?!?
thanks to my addiction to a few foodie blogs, i keep myself inspired and always have a stack of recipes to test out. this was one i knew we had to make ASAP:

chickpeas, parsley, lemon zest, onion, kalamata onion, salt, pepper, olive oil - all things i have on hand at any time. and i even found a cheaper olive source while still supporting a local specialty shop!
we threw it together in minutes and ate it on my homemade flax seed sourdough and had a hearty, healthy, fresh, easy and cheap dinner in no time. after one bite i was hooked and coulda eaten the whole bowl. i took to the streets telling folks about it too. who wouldn't like it?
also think it would be great as a dip with some homemade pita chips, as an alternative to hummus.
she has another chickpea dish that i wanna make when i get my hands on a decent butternut squash:
