It's Christmas! What better time for a batch of Pepperpot, Guyana's national dish, traditionally served at this time of year.

 

This batch, made for a pot luck with friends, was made with pork hocks as the only meat. It can also be made with beef, lamb, or a combination of meats. Celebrity chef, Gordon Ramsay, even made a version with chicken.

 

The key ingredient, giving it a rich dark colour is cassareep, derived from cassava. This ingredient looks like molasses, but not with the sweetness. It has preservative properties, allowing the finished dish to remain unrefrigerated for days.

 

Very few restaurants serve this dish so find a friend to cook it for you!
