I rummaged through my pantry and threw together a dish of Pork, Fa Chong, Gim Jim, and Muknee. These are traditional Hakka Chinese ingredients that I grew up with in Jamaica. In Toronto, the more popular Indo-Hakka cuisine doesn't include pork.
Fa Chong, or Lap Cheong, is a Chinese pork sausage. It's usually just steamed and eaten with rice or as a side dish. There's also a version made with liver.
Gim Jim is dried Lily Flowers, also sold as Golden Needles. This is usually prepared with chicken.
Muknee is also known as Wood Ear Mushrooms, or Bat Ears by some. It's a fungus available in different varieties. It's often used in stews, soups, and salads.
