Julia and I watched the chef splash in some milk to make the milky-white broth for the Tonkotsu Ramen, just like Kenny said. I don't really mind that shortcut, as long as the broth still has the fragrance of pork and fried garlic. Both of these seemed absent in today's broth, and the prices have gone up by AUD1 since 2009.
Prices have gone up at Momotaro Rahmen, and the quality slight down.
